Baker's Notes:
I used Wilton Color Gels in Pink, Lemon Yellow and Leaf Green. The tip is a 1M tip.
Equipment we recommend for making our Easter Cheesecake Recipe
Equipment can have a big impact on how a recipe turns out. For this recipe, we used a Webake Springform Pan 10 Inch that is essentially a cheesecake pan. We like this pan in particular because the 10-inch springform pan is made of heavy gauge carbon coated steel, is oven safe to 450 so of course it can be used for baking real cheesecakes too! It has an advanced nonstick coating design and evenly heating capability, and a spring latch and interlocking, which gives it a leak proof seal. You can buy it here on Amazon!
You will also need a 1M Piping Tips with Bags to decorate your cheesecake! You can get them here on Amazon as well.
Top tip
I used Wilton Color Gels in Pink, Lemon Yellow and Leaf Green. We find that Wilton offers a superior product when it comes to food coloring!
Directions for making this Easter No Bake Cheesecake Dessert Recipe:
Please note that the recipe prep time largely depends on how quickly you move during the steps we provide. It took me about 15 minutes altogether to whip this up - not including the time it takes for it to set in the fridge.
I like to use my Kitchenaid stand mixer fitted with the whisk attachment, but you can also use a regular hand mixer to make this recipe. If you are using a hand mixer, add the graham cracker crumbs and ⅓ cup of granulated sugar to a large mixing bowl and beat until they are combined into a fine crumbly mixture.
Add the melted butter to your graham cracker sugar mixture and stir it well until it is combined and crumbly. Pour this graham cracker crumbs mixture into a 10" spring form pan and use the back of a measuring scoop to gently but firmly press the graham cracker crust into the springform pan. Refrigerate your graham cracker crust while you begin to work on the cream cheese mixture portion of our recipe.
Place the cream cheese softened and granulated sugar together in a mixing bowl and beat cream cheese until they are thoroughly combined.
Add the pure vanilla extract and 1 small tub of the whipped topping and beat together until they are combined well.
Divide this mixed batter equally into 3 separate bowls - you are going to color each bowl a separate color. First with the pink food coloring, then the lemon yellow, then the leaf green. Add a SMALL drop of food coloring at first, and mix it to see if it is the depth of color you want.
Keep in mind that when it comes to food coloring, a little goes a long way! You can gradually add more food coloring to get a richer consistency of color if you like. We only used one small drop of each color.
Layer the prepared colored mixture on top of the prepared crust.
Cover your cheesecake in an airtight container and refrigerate your prepared cheesecake for four hours or overnight.
When you are ready to serve your Easter Cheesecake, use half of a tub of whipped topping and place it into a pastry bag fitted with a large start tip.
Pipe the whipped topping on top of the cheesecake, and top it off with sprinkles and M&M candies and or mini Cadbury mini eggs.
Slice and serve immediately or cover and refrigerate until ready to serve.
