Ingredients for making this Mini Lemon Cheesecakes Recipe
- 8 mini graham cracker pie crusts
- 2 packages cream cheese, softened
- ½ cup white sugar
- 1 tablespoon fresh lemon juice
- ½ teaspoon lemon zest
- ½ teaspoon lemon extract
- ½ teaspoon vanilla
- 2 eggs
- Fresh Lemon (for garnish)
- Lime Zest (for garnish) or try Mint Leaves

Directions for making this Mini Lemon Cheesecakes Recipe
Heat oven to 350 degrees F.
In a large mixing bowl, beat together the cream cheese and sugar until it is smooth. Add in the lemon juice, lemon zest, extract and vanilla and mix it well.
Next, add in the eggs, one at a time and mix it until it is just blended.
Immediately pour the mixture into 8 mini pie crusts.
Bake 18-22 minutes or until centers are no longer jiggly.
Let the mini lemon cheesecakes cool and then refrigerate then until they are firm. This should take about 2 hours.
Garnish your finished mini cheesecakes with very thinly sliced lemons and a little lime zest before serving.
This recipe makes 8 mini pies. You can easily double the ingredients to make a double batch, which would be big enough for a big family gathering or a church potluck!
