I am just MADLY IN LOVE with this awesome Easter Carrot Cake Whoopie Pies Recipe for Spring – especially Easter! I mean, really, who doesn’t love Whoopie Pies? I have such great memories of eating whoopie pies and oatmeal raisin pies with my paternal grandfather growing up as a child (mostly the latter, as they were his favorite).
Easter Carrot Cake Whoopie Pies Recipe
Whenever I see an oatmeal raisin pie in the rack at gas station snack section, I think back to sharing that tasty treat with my grandfather…but I prefer Whoopie Pies so much more, especially when they’re freshly homemade!
I can’t even remember the last time I had a Whoopie Pie, it’s one of those things that few people make, but when they do, everyone eats them up quickly! These Easter Carrot Cake Whoopie Pies would be so delightful to serve at your Easter dinner – or even just for a fun dessert idea for a Mother’s Day or May Day brunch!

Everyone loves Carrot Cake, right? I even love those little carrot cakes with the cream cheese frosting that you can buy in individual servings in your local grocery stores and drug stores.
Carrot Cake Whoopie Pies Recipe
- 1 package (15 oz) Carrot Cake
- 1/2 cup Flour
- 1/2 cup Water
- 1/3 cup Oil
- 3 Eggs
- 1 tub Cream Cheese Frosting
- Wilton Sparkle Gels in Orange and Green (optional)
- Edible Easter Grass
Directions:
Preheat your oven to 350 degrees and line a cooking baking sheet with parchment paper. This will ensure that your whoopie pies are baked perfectly even and don’t stick, so that they come off nice and clean once they are done.
In a medium mixing bowl, add the cake mix and flour and mix it well. Next, you are going to add in your water, oil and eggs and mix this all together until it is combined. If you are using an electric mixer, beat it at low speed – but it is not necessary to use an electric mixer. A wire whisk or large spoon will work just fine.
Once your dough is completely combined, spoon the mixture onto your prepared baking sheet. I uses a 2 Tablespoon portion scoop for a nice sized whoopie pie. Then gently spread the batter with the back of the scoop into a 2.5″ circle.
Bake your whoopie pies for 12 minutes and then allow them to cool on a cooling rack. This should take about 10 minutes to be completely cool.
When completely cool, frost the bottom of one whoopie pie and press another onto the frosting to create a sandwich.
Resist the urge to lick the cream cheese frosting right off the spoon…I know, I know, it’s hard!
All that creamy filling, can’t you just taste it on your tongue already? Don’t worry, no one can see you drooling through the internet! Even if we could, we wouldn’t blame you!
If you are feeling really creative, draw an orange carrot onto the top of the whoopie pie and a green top. I think this is a necessary detail, it ties the whole carrot cake theme together so nicely. Also, let’s face it; it just makes these whoopie pies so much cuter!
Serve these Easter Carrot Cake Whoopie Pies on a bed of edible green Easter grass cut into 1″ pieces if desired. It adds such a cute little touch to the presentation.
This Easter Carrot Cake Whoopie Pies Recipe makes 12 whoopie pies. Feel free to double the recipe so that you can make more for those big Easter dinner crows! YUM! We have anywhere between 20 and 30 people at our family Easter dinner each year, so large quantities – especially for something this delicious – are always necessary.
