Why we love this Caprese Pasta Salad
My all time favorite salad is Caprese Salad! I just love the combination of tomatoes and mozzarella - my favorite cheese and my favorite "veggie." Yes, I know that tomatoes are technically a fruit, but we all think of them as vegetables, don't we? A little balsamic glaze, a sprig of basil and you have such a fun salad that's so refreshing!

What Makes Sfoglini Pasta So Great
Sfoglini works with local flour mills in New York to source whole grain flours and uses the traditional Italian method of using bronze dies and slow drying. That's what gives Sfoglini pasta that good texture for your sauces to really stick to!
How to make Caprese Pasta Salad
We used Sfoglini Reginetti Pasta in this easy Pasta Salad recipe, but you can use any bigger, shaped style pasta that holds seasonings and oils well. The Reginetti (or "Mafaldine") pasta shape is originally from the city of Naples, and was named in the honor of Princess Mafalda of Savory. It means "little queens." How cute is that!?
Ingredients you will need to make Caprese Pasta Salad
- 12 ounces Sfoglini Reginetti pasta
- 16 ounces mozzarella pearls
- 3 cups cherry tomatoes, halved
- ⅓ cup extra virgin olive oil
- 3 tablespoons balsamic vinegar
- ½ teaspoon salt
- 1 teaspoon freshly ground black pepper
- ½ garlic clove, minced
- a few sprigs of fresh basil, to taste
Instructions for how to make Caprese Pasta Salad
Firstly, add your salt to a pot of water and bring to a boil. Once the water is boiling, add the Sfoglini Reginetti pasta and cook as per the instructions on the package, which is 10 minutes.
Drain the water from the pot. I recommend leaving a tiny bit of water in the pot to help the seasonings bind to the pasta.
While the pasta is cooking, separate the mozzarella pearls - mine came really stuck together in a tight ball! If you haven't cut your cherry tomatoes in half yet, make sure you get that done now.
Choose your pasta salad serving dish, or if you're preparing this Caprese Pasta as a pasta salad side dish in advance of when you'll be serving it, grab a food storage container.
Add the cooked Sfoglini pasta, the mozzarella pearls and cherry tomatoes to the dish with the pasta and give it a really good stir!
In a small bowl combine the olive oil, balsamic vinegar, and minced garlic. Pour it over the pasta and stir it until the Caprese Pasta Salad is completely combined and evenly coated.
I reserved 2 sprigs of the fresh basil to garnish the dish, but you will want to tear up the rest of the basil you're using now to mix in.
Then sprinkle with your fresh ground pepper and give it another good stir.
Our easy Caprese Pasta salad should set for at least 30 minutes to let the flavors combine for serving.

You can store this easy pasta salad in the refrigerator for up to 3 days. It does not stand well for freezing.

If you are making this Caprese pasta salad as a side dish, it serves about 6-8 - with a generous helping. If you are making this dish as a main course, or meal, it serves 2-3, depending on the appetite!
