How to Make No Bake Pumpkin Cookie
Like any drop cookie, these pumpkin cookies are super easy to make. It only takes a few minutes of prep and a little scooping. In fact, the hardest part of this recipe is waiting for the cookies to cool!

1: Boil the cocoa powder, milk, butter, and sugar.
2: Mix the remaining ingredients in a large mixing bowl and pour the hot chocolate mixture of it.
3: Stir well and drop large spoonfuls onto a parchment paper-lined pan.
4: Cool until hardened.

No Bake Pumpkin Cookies
Ingredients
- ½ cup peanut butter
- ½ butter
- ½ cup milk
- 2 cups sugar
- ⅓ cup pumpkin purée
- 5 T cocoa powder
- 4 Cups dry oats
Instructions
- In a medium sized saucepan, add cocoa powder, butter, milk, and sugar
- On medium heat, bring ingredients to a boil, mix, and boil for 3 minutes
- While waiting, in a large mixing bowl, add oats, pumpkin purée, and peanut butter and set aside
- Now that your mix has boiled for 3 minutes, turn off heat and pour over the oat mix
- Mix well and scoop a spoonful at a time onto a parchment paper lined pan
- After you scooped out all your cookie mix, let cookies cool for a couple hours or until hardened (put in the fridge for a quicker result)
