- Green gel food coloring (I prefer to use Wilton Kelly Green Gel Colors)
- Rainbow sprinkles - these Wilton rainbow sprinkles even have mini rainbows in them!
- Dehydrated marshmallows or Lucky Charms Marshmallows only
- White and green sprinkles - like these Saint Patrick's Day sprinkles

How to Make These St Patricks Day Cupcakes
First, prepare the cupcake batter according to instructions on the box. Once prepared, pour the batter into lined cupcake tins and bake according to the instructions. Allow your plain white cake mix cupcakes to cool completely before you begin to frost them or the frosting will simply melt!

- Prepare and bake cupcakes as directed on the package. Cool completely.
- Add green food coloring to a tub of frosting and mix well. Place into a piping bag fitted with a 1M tip. Set aside.
- Use a melon baller to scoop a hole into the center of cupcake and reserve the top cake piece. Scoop a little more out and discard that cake. Fill with marshmallows and rainbow sprinkles and replace reserved top.
