Jump to RecipeEaster Sunday falls on April 21 in 2019, which is the day after my birthday! One year, my mom actually made my birthday cake in an Easter theme, as it fell ON Easter Sunday. It worked out well for my family dinner, as everyone was already in attendance anyway!
My best friend even joined us for Easter dinner and my little birthday celebration. Even when my birthday does not fall on Easter, I often see elements of the Easter holiday in the cake that my mom makes me.
She is so creative when it comes to baked goods and cake decorating.

White Chocolate Sugar Cookie Bites Recipe Directions
Cream butter and sugar together. Add vanilla, milk, and flour. Mix until combined.
Place dough in between two pieces of wax paper. With a rolling pin, roll dough to ¼ inch thick.
Peel the top piece of wax paper off and refrigerate the dough for about 30 minutes.
Using a 1-inch round cookie cutter, cut 48 circles out of dough. Refrigerate for 15 minutes.
Prepare your mini cupcake pan with mini cupcake liners.
Melt the white chocolate chips. I recommend putting them into a glass mixing bowl and cooking at 30 second intervals, stirring between each interval. The problem with melting chocolate is that it is actually quite easy to burn it - and there is no salvaging burnt chocolate when it comes to recipes!
Coat the bottom of each mini cupcake liner with white chocolate. Shake pan to level it out.
Place two circles of dough in each cupcake liner.
Using the remaining melted white chocolate chips, cover up each sugar cookie circle. Make sure to shake the pan again to even it out.
Top each off cookie cup with the sprinkles of your choice.
Refrigerate until the bark is hardened.
