Our green chicken chili is one of my favorite things to make, and I owe it all to my first trip to New Mexico! This slow cooker green chile chicken is one of my favorite slow cooker recipes because it is made with diced green chiles, which come from Hatch, New Mexico!
Hatch green chiles are friggin amazing in this crock pot green chile chicken! These Hatch green chiles aren't "spicy" like some other chilis. Hatch green chiles have an amazing smoky flavor that I really love, and they are perfect for a crockpot green chili.

As long as I have either skinless chicken breasts or skinless chicken thighs in the freezer, I can easily make a slow cooker chicken dinner! I can throw together a recipe like this crockpot chicken green chili. Or even a green chili chicken crock pot tacos or salsa verde chicken!
I can usually find everything I need to throw together a quick but delicious meal with a few canned goods staples. Like I did with this crockpot green chile chicken. It's usually on one of those mornings when I know that I'm not going to feel like cooking once the day is through!

How to make Chicken Green Chili Crock Pot
Here are the ingredients that you will need to make our Green Chili Chicken Crock Pot
I used frozen boneless skinless chicken in this recipe because it's all that I had on hand. You can also use canned chicken, or fresh chicken if you have though that far ahead when planning your crockpot shredded green chile chicken.
- boneless skinless chicken - You can use anything from skinless chicken breasts to boneless chicken thighs
- diced green chilis - We recommend using Hatch green chiles
- Red Kidney Beans - You can use light red kidney beans or dark red kidney beans
- Black Beans - I prefer to use the black beans that are not seasoned
- Diced Tomatoes - you can also use Rotel diced tomatoes with green chiles if you want more heat in your chili
- Tomato Sauce - any type of tomato sauce will do, just make sure that you aren't using pasta sauce!
- Package Carrol Shelby's White Chicken Chili Kit (or another type of chicken chili seasoning package)
Optional: sliced Yellow onion and Sharp Cheddar Cheese and Sour Cream for garnish.

Top Tips for making this healthy Chicken Green Chili Crock Pot Recipe
Whatever kind of chicken you are using, throw it into the crock pot with the other ingredients to cook. You will shred chicken after it is cooked for a better result! Shredded chicken just works much better in this green chili chicken crock pot recipe than big chunks!
Please note that you can use an Instant Pot or Ninja Foodi for this recipe, as long as you use the slow cooker feature.
Using a large slow cooker, turn the heat to low and add in your chicken, the sliced onion, can of diced green chiles (do not drain), the tomato sauce and can of diced tomatoes (do not drain).
Firstly, you are going to being by draining and rinsing the red kidney beans and black beans. After they are rinsed, you will add them to the other ingredients in the crock pot. Mix the Chicken chili seasoning packet with one can of water and pour it over the top of the contents of your crock pot.
Then cook on low for eight hours or on high for 4 hours.
Once you are done, shred chicken and stir everything together so that the chicken spreads throughout the chili!
Garnish with a heaping handful of shredded sharp cheddar cheese and a dollop of sour cream, if desired. Then sprinkle ground black pepper over the top to really bring those flavors to life!

Variations and Additions to this Chicken Green Chili Crock Pot
While we think that this recipe is perfect all on its own, you are always welcome to make adjustments to anything we share. Just take note that if you change the recipe, it is not going to turn out exactly like our crack chili chicken.
- Extra Spicy - You can add chili pepper flakes or extra chiles if you want a spicy chili
- Deluxe - Offer the options of adding add guacamole, crispy onions or sharp cheddar cheese and sour cream on top!
- Kid friendly - If you would like to cut down on the chile flavor, stir in ¼ cup of cream cheese into the mixture to make it more mild.

FAQS about our Green Chili Chicken Crock Pot
While I do not follow the KETO diet, I am very familiar with the low carb lifestyle! This recipe, made exactly as-is, contains about 20 net carbs per serving.
You can definitely make a chili without tomatoes, but I do not like those varieties. You can do a Google search for Chili recipes without tomatoes to find ideas for this.
While you do not technically need to stir chili being cooked in a crock pot, you can do it anyway! I recommend stirring about halfway through the cooking time to ensure that all of the ingredients absorb the seasonings evenly.

- 1 large yellow onion sliced (optional)
- Sharp Cheddar Cheese and Sour Cream for garnish optional
Instructions
- Using a large slow cooker, turn the heat to low and add in your chicken, sliced onion, diced green chiles (do not drain), the tomato sauce and diced tomatoes (do not drain).
