Why you will love our Green Chili Chicken Crock Pot
I don't know about you, but the last thing I've felt like doing this month is cooking. When I don't want to cook, I rely heavily on easy to make chicken recipes with staples like boneless skinless chicken, ground beef, and canned and frozen vegetables.
Our green chicken chili is one of my favorite things to make, and I owe it all to my first trip to New Mexico! This slow cooker green chile chicken is one of my favorite slow cooker recipes because it is made with diced green chiles, which come from Hatch, New Mexico!
Hatch green chiles are friggin amazing in this crock pot green chile chicken! These Hatch green chiles aren't "spicy" like some other chilis. Hatch green chiles have an amazing smoky flavor that I really love, and they are perfect for a crockpot green chili.
You can also refer to this Green Chili Chicken Crock Pot recipe as crockpot green chicken chile. I know that some people always spell it that way!
This recipe was inspired by my Green Chile Chicken Enchiladas that we shared a while back.

FAQS about our Green Chili Chicken Crock Pot
While I do not follow the KETO diet, I am very familiar with the low carb lifestyle! This recipe, made exactly as-is, contains about 20 net carbs per serving.
You can definitely make a chili without tomatoes, but I do not like those varieties. You can do a Google search for Chili recipes without tomatoes to find ideas for this.
While you do not technically need to stir chili being cooked in a crock pot, you can do it anyway! I recommend stirring about halfway through the cooking time to ensure that all of the ingredients absorb the seasonings evenly.

Did you know that the canning process is basically the same as it was several generations ago? The canning process locks in foods’ freshness, flavor and nutrients at the peak of ripeness. This is usually just hours after picking.
With canned foods, you can stock your pantry and know that you do not have to worry about expiration dates! Not anytime soon, anyway!
Did you know that 73% of Americans throw away expired foods, including rotten fruits and vegetables twice a week? I hate to admit it, but we are one of those families. I always start out with great intentions and buy fresh produce, thinking that we will eat so healthy all week!
Of course, most of our fresh fruits and veggies ends up sitting in the crisper until it starts to turn. Because like many families, I don't always have time to make an elaborate meal or cook with fresh produce. Using canned goods is just easier and less wasteful when it comes down to it.
It also saves tons of time washing, chopping and preparing ingredients to make meals like our green chile chicken crock pot dinner.
