I don't know about you, but the last thing I've felt like doing this month is cooking. Well, I take that back - I also haven't felt like grocery shopping. I'm not the only one, right? It's at times like these that I make good use of the canned foods in the cabinet! I can usually find everything I need to throw together a quick but delicious meal in a few canned goods staples. I make this Slow Cooker White Chicken Chili every once in a while - it's usually on one of those mornings when I know that I am not going to feel like cooking once the day is through!
Having a fully stocked “Cantry” is the easiest way to save time and still enjoy a healthy home-cooked meal, even on those days when you don't really feel like cooking but don't want to go out to eat or end up in the fast food drive-thru. It’s homemade made easy.
Why canned goods? It's simple, really. Canned goods are one of the best ways to get wholesome food right from the farm to our family’s dinner table. Did you know that the canning process is basically the same as it was several generations ago? The canning process locks in foods’ freshness, flavor and nutrients at the peak of ripeness, usually just hours after picking. With canned foods, you can stock your pantry (or cabinets, as well call them) and know that you don't have to worry about expiration dates anytime soon!
73% of Americans throw away expired foods, including rotten fruits and vegetables twice a week. I know that we are one of those families...I start out with great intentions and buy fresh produce, but it ends up sitting in the crisper until it starts to turn, because I don't always have time to make an elaborate meal or cook with fresh produce. Using canned goods is just easier and less wasteful!

In the meantime, check out my super easy Slow Cooker White Chicken Chili recipe! I used frozen chicken in this recipe because it's all that I had on hand, but you can also use canned chicken, or fresh chicken too if you've though that far ahead.
Slow Cooker White Chicken Chili Recipe
Ingredients
1 pound chicken (any type!)
1 4.5 ounce can Old El Paso diced green chilis
1 15 ounce cans Goya Red Kidney Beans
1 15 ounce can Goya Black Beans
1 15 ounce can Muir Glen Diced Tomatoes
1 15 ounce can Muir Glen Tomato Sauce
1 package Carrol Shelby's White Chicken Chili Kit
1 large yellow onion, sliced (optional)
Sharp Cheddar Cheese and Sour Cream for garnish (optional)
Directions
Using a large slow cooker, turn the heat to low and add in your chicken, sliced onion, diced green chiles (do not drain), the tomato sauce and diced tomatoes (do not drain).
Drain and rinse the red kidney beans and black beans, and add to the slow cooker. Mix the seasoning packet with one can of water and pour over top of the contents. Cook on low for eight hours.
Once done, shred the chicken and stir so that it spreads throughout the chili!
Garnish with cheddar cheese and a dollop of sour cream, if desired.

"Cantry" is such a fun word! This looks like a very delicious recipe. Chili is such a hard dish to get just right, but when you find something that works, you gotta stick with it. (I still haven't found one that I've been able to perfect, so I'm going to have to try your recipe!)
