I’ve shared a lot of slow cooker recipes and a few Instant Pot recipes over the last few years, and some of my regular readers may wonder why I am such a fan of the “easy dinner” when I work from home. You might think that I have all of the time in the world…but I really don’t! It seems that when you work from home, you never stop moving! There’s always something to do, whether it be actual blog work, creating recipes for clients, feeding the dogs, letting the dogs out, running a load of dishes, moving the laundry from the washer to the dryer…oh, and did I shower yet today? Hmm…slow cooker recipes have always been my favorite because you get all of the goodness of a home cooked meal with VERY little effort. This Slow Cooker Chicken Thighs with Potatoes and Carrots Recipe is one of those perfect meals for families and single gals like myself and Angeline. We get a nice protein, veggies, and leftovers – without a ton of work! I still use my big slow cooker, despite it just being Angeline and I, because we get leftovers!
This Slow Cooker Chicken Thighs with Potatoes and Carrots Recipe has a really great herb flavor and is really tasty and juicy! That’s one of my favorite things about slow cooker chicken thighs – it’s almost impossible to overcook a chicken (or really any type of meat or poultry) when you’re cooking it so slowly over low temperature! I make ribs in the slow cooker too! The meat falls off the bone in this recipe, which is one of my favorite things. You could swap our the bone-in chicken thighs with boneless/skinless chicken thighs as well, to make it a little easier. I find that buying the bone-in is more economical for us.
Slow Cooker Chicken Thighs with Potatoes and Carrots Recipe
Ingredients
- 4 chicken thighs
- salt and pepper
- 2 potatoes, sliced into cubes
- 3/4 cup carrots, chopped into rounds
- 1/4 cup chicken broth
- 1/4 cup white wine
- 1 teaspoon minced garlic
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
Directions
Place chicken thighs into a slow cooker and season with salt and pepper.
Place potatoes and carrots on top of chicken and set aside.
In a mixing bowl, add chicken broth, wine, garlic, thyme, salt and pepper and mix well. Pour over chicken thighs.
Cook on low for 5-6 hours.
