These Lemon cake cookies were inspired by our Angel Food Cake Cookies that we shared a while ago. It has been such a hit that I have embarked on a Cake Mix recipe baking spree!
I am currently away from home housesitting for Angeline while she and Jameson are on vacation with her hubby. I had been thinking about making this lemon cookie recipe from cake mix for a while, but it has been raining every single day at home in Miami!
It is so difficult to get good photos when it is dark and dreary outside! Angeline has a great kitchen with tons of natural lighting, so I have been using this opportunity to bake up a storm!
Our lemon cookies made from cake mix are so easy to make - they only require four easy ingredients! I used the Duncan Hines Perfectly Moist Lemon Supreme cake mix because it was on sale! Hey, a girl's gotta do what a girl's gotta do! I think any brand will do for our easy lemon cookies from cake mix.

We used Duncan Hines Perfectly Moist Lemon Supreme cake mix because it was on sale, but you can use any kind of lemon cake mix. Make sure that it is CAKE MIX and not cookie mix or muffin mix. The cake mix is what creates such soft, moist cookies in this lemon cake mix cookies recipe.
- 1 box Lemon cake mix
- 2 eggs
- ⅓ cup vegetable oil
- 1 cup powdered sugar

Instructions for how to make this lemon cookies recipe with cake mix
Now, this lemon cookie recipe with cake mix is so easy to make, as it only requires 4 ingredients. And to be perfectly honest, you can even skip the powdered sugar in the last step if you like.
I did some of my lemon cookies with the powdered sugar and a few without to see if there was a difference in taste. There was not! It is purely for a visual effect.
You are going to start by preheating your oven to 350 degrees and lining a baking sheet with parchment paper.
In a large bowl, add your 2 eggs and ⅓ cup vegetable oil and whisk together until the mixture is creamy. I used my Kitchen aid Mixer, but a hand mixer will work just fine.
Add in your box lemon cake mix and beat until together until your lemon cake mix2 is thoroughly combined.
Your mixture will be really thick and sticky. I recommend that you chill your lemon cookies cake mix cookie dough in the refrigerator for about 10 to 20 minutes. It will make it easier to handle once you are ready to scoop!
Using a table spoon or a cookie scoop, scoop your cookie dough. Then roll them into dough balls in the palm of your hand. They should be about a tablespoon's worth of cookie dough.
In a small bowl or a plate, pour one half of a cup powdered sugar and roll the cookies lemon cake mix dough balls so that they are evenly coated.
Place your easy lemon cookies with cake mix about 2 inches apart on you baking sheet lined with parchment paper. With the palm of your hand or the bottom of a clean glass, press the lemon cake box cookies dough balls down slightly.
Bake your lemon cookies from cake mix for 10-12 minutes, until the bottoms of the cookies are slightly golden brown. Remove them from the oven and allow them to cool for about 2 minutes, and then transfer to a cooling rack to finish cooling.
Hint: If you do not press the cookies down before baking, they will puff up! You can have fun with this Lemon Cookies from Cake Mix recipe and do some of each!
Top tip
Your Lemon box Cake Cookies will appear to not be done after 10 minutes. I was experimenting with this recipe, so I put some of the cookies back in for 5 minutes - for a total cook time of 15 minutes. They weren't burnt, but the bottoms were a lot harder than I liked. So I suggest 10-12 minutes for the perfectly soft and moist cookie.
Substitutions and Variations of Lemon Cookies From Cake Mix
These Lemon Cookies from Cake Mix have a nice powdered sugar coating on top. They are absolutely delicious just as they are. But I know that sometimes we like to change recipes, so here are a few ideas!
Lemon Zest - You can add in ¼ cup of fresh lemon zest to make these cookies extra lemony.
Lemon Glaze - If you want to make a fresh lemon juice glaze instead of rolling these cookies in powdered sugar, that will taste great too! Simply mix 2 tablespoons of fresh lemon juice with 1 cup of powdered sugar and glaze your cake mix cookies lemon once they are cooled down. DO NOT glaze them before cooking.

I have noticed that Cake Mixes have decreased in size from 15 ounces to 13 ounces how does that change the amount of oil that you would use?
