Cherry Stuffed Cake Mix Cookies Recipe
As everyone knows by now, I absolutely LOVE cookies. I love to bake cookies, I love to try new cookie recipes, I love to EAT ALL OF THE COOKIES. I am a veritable Cookie Monster!
Folks, I even like Oatmeal RAISIN COOKIES! Yes, I said it. I like OATMEAL R A I S I N COOKIES. Go ahead and judge me. I don't care, I think that they are delicious.
That is just how much I love cookies.
Who doesn't love cookies? Cookies are the best! They are single serving without even trying and a great way to have a sweet treat without totally breaking your calorie budget for the day if you are dieting.
These cookies are moist and chewy, and they are the perfect blend of chocolate sweetness and cherry.
The sprinkles of sugar on the top can be omitted if you like, you really do not even need them! I like to use them because I think they dress up the Cherry Stuffed Cake mix Cookies a little and make them a bit fancy!

- 1 box chocolate cake mix
- 2 eggs
- ½ cup of vegetable oil
- 20 Cherries (can cut up or leave whole)
- ¼ cup red sugar crystals, optional

Directions for making this Cherry Stuffed Cake Mix Cookies Recipe
Preheat oven to 350 F and then line two baking sheets with parchment paper or silicone baking mats.
Combine the chocolate cake mix, eggs and oil together until completely combined.
Portion the dough into 1-Tablespoon sized scoops.
Flatten each scoop and place a cherry in the center. Wrap the cookie dough around the cherry so that it is completely enclosed.
Place the sugar crystals in a small bowl and dip the cookie ball into the sugar crystals.
Place the cookie ball sugar-side up on the prepared baking mats. Bake this easy Stuffed Cookies Recipe for 8-10 minutes.
