    Baked Zucchini Fries | The Rebel Chick

    Panko and Parmesan Baked Zucchini Fries Recipe

    It is Spring! And, we all know what that means, right? Zucchini is growing like wild weeds. Now, you can really only eat so many salads. So, you're left with 2 options. Give it away to family and friends, or get creative with it. Personally, anytime I can get the kiddo to eat his veggies, I'm going to take it. Today, we're going to get our veg on with these Baked Zucchini Fries! Panko and Parmesan crusted, baked not fried - And oh so yummy! Crispy outside nice and soft inside. Tricky moms unite. The kiddos will never know the difference. Make a nice marinara dipping sauce and you even have a great party appetizer going! Ready? Let's get these Zucchini Fries going!

    Panko and Parmesan Baked Zucchini Fries Recipe

    Ingredients:

    • ¼ cup flour (or, Italian breadcrumbs)
    • 2 eggs
    • 2 cups Panko
    • ½ Cup Parmesan Cheese
    • Salt (to taste)
    • Pepper (to taste)
    • ½ teaspoon garlic powder
    • ¼ teaspoon cayenne pepper (optional)
    • 1 lb zucchini (cut into 4in fry shaped sticks)

    Directions:

    Preheat oven to 400 degrees.
    In small bowl, combine the flour and seasonings.  Give it a quick mix with a fork and set aside.
    In another bowl, beat the egg with salt.  Set that aside.
    In a 3rd small bowl, mix the Panko with the Parmesan cheese. Now, line all 3 bowls up side by side.
    Like a quick assembly line, dip the zucchini fries into the flour mixture, then the egg mixture and finally the Panko mixture.  Place on a baking sheet and repeat until all of the zucchini fries are coated and lined up nice and pretty.  Place the baking sheet in the oven on the middle rack. Bake for 25-30 minutes until golden brown and crispy.  Sprinkle with a smidgen more Parmesan and you're done! Serve immediately as these can get soggy quick. Whip up your favorite marinara sauce. See those happy veg eating faces?

      Those are something I would LOVE to snack on! My hubby and I are big on snacking and these are a bit healthier, so that's always a plus.

      Oh yes I am making these! I love zucchinni.. (just can't spell it).. I will be pinning this! Probably will leave out that cayenne pepper... Too spicy for me;-)

      I do quite enjoy zucchini on it's own and have been meaning to get a little creative with it in the kitchen. Like you said there are only so many times a salad will suffice and eating the same thing the same way over and over again gets boring. I'll definitely have to add this to my must-try list 🙂
