Parmesan Crusted Cod and Mediterranean Couscous Recipe #GoGortons

It’s not even April yet and I’ve used a good number of my frequent flier miles as I try to decide where I want to start the next chapter of my life: New York or San Francisco? While I’m busy taking in everything the cities have to offer, I’m still working hard at reaching my fitness goals. You can imagine how difficult that can be in between trips along the coast!

Which is why I’m quickly becoming a pro at quick but nutritious meals. Growing up in seaside Miami, it should come as no surprise that I love fish and it’s common knowledge that seafood is good for you! So of course, I try to incorporate a lot of fish into my diet, like Gorton’s new Gourmet Fillets!

With its natural omega-3 fatty acids, lean protein, and critical vitamins, fish is one of those super-foods we should all eat more of. In the past, I only ate fish that my husband and I caught myself because I prefer wild-caught fish over farm-raised. Unfortunately, I lost the friend with the boat in the divorce – so I am doubly excited about the wild-caught Gorton’s Seafood selections!

Actually, the American Heart Association, American Cancer Society, and American Diabetes Association all recommend eating seafood at least twice a week because it aids brain development, promotes heart health, helps fight obesity, improves arthritis/joint pain and improve overall health.

This week I took their recommendation and whipped up Parmesan Crusted Cod with a Mediterranean Couscous. It sounds like way more work than it is thanks to Gorton’s new Gourmet Fillets. Their new fillets come in flavors like Parmesan Crusted Cod, Pub-Style Beer Batter Cod, Tuscan Garlic & Herb Tilapia and Signature Seasoned Salmon.

All four chef-inspired varieties of these extra-large fillets are made with real ingredients like roasted garlic, Parmesan, butter and oregano and have no artificial flavors of MSG. The best part is they’re so easy to prepare! I just popped it in the oven while I whipped up my favorite variety of boxed couscous but I added a half can of garlic, herb and olive oil stewed tomatoes as it finished cooking for a Mediterranean flavor.

    This looks like such a nice easy dinner. I love how you put the fresh tomatoes in the cous cous. I think this would be a nice dinner for the whole family.

    That’s a perfect pairing. Hubby loves seafood and doesn’t get it often enough for his taste, he’ll love this cod.
