As part of the 12 recipes in 12 months blogging group that I am in, I had to come up with a fun heart shaped recipe for today. I had grand plans for today's recipe...heart shaped red velvet whoopie pies, heart shaped pancakes with fresh strawberries and whipped cream...you get the picture!

Unfortunately, my imagination was much larger than the free space in my schedule...between being swamped with work before spending a week in Kissimmee during the launch of the Rock Your Vacation Instagram Contest and playing catch up when I got home, I ended up going the super simple route for our February recipe! This Valentine's Day Rice Crispy Treats Recipe is super easy to make and who doesn't love Rice Crispy Treats?

    Valentine's Day Rice Crispy Treats

Seriously, you just can't go wrong with Rice Crispy Treats! I am going to have to make another batch for this upcoming weekend!

    Valentine Rice Crispy Treats

    Ingredients

    40 marshmallows
    4 Tbs. Butter
6 C. Rice Krispies (or off-brand rice cereal)
    Red food coloring
    Heart shaped cookie cutters
Wilton Pink and White Candy Melts
    Wilton Valentine nonpareils sprinkles
    Non-stick spray
    Candy sticks **optional

    Directions

Spray 9x13 pan with non-stick spray. In a large pan melt butter and marshmallows on low heat. Once the mixture is smooth add several drops of Red food coloring and stir.

Once marshmallow and butter mixture is pink stir in the 6 cups of rice cereal and coat completely. Pour into 9x13 pan and press down evenly with wax paper (mixture will be sticky) or with the back of a large spoon. Use the cookie cutters to cut out the hearts and set aside.

Melt the Pink Candy Melts in a microwave safe bowl in 30 second increments stirring until melted. Let cool 1-2 minutes. Dip the Heart shaped Valentine treats into the chocolate one at a time and set aside. Repeat with the White Candy Melts. Sprinkle with Valentine nonpareils

I made something similar to these last year for an office party, and there were a MASSIVE hit! I never thought of coating the outside with chocolate though, good touch!
