You can make these Mint Chocolate Chip Cookies with green with the green food coloring as we describe in the step by step instructions below, or you can also just leave them plain colored like a regular chocolate chip cookie.
Ingredients you will need to start gathering to make this Mint Chocolate Chip Cookies Recipe
- Butter, unsalted
- Granulated white sugar
- Egg at room temperature
- Sour cream
- Peppermint extract
- Green food coloring
- All purpose flour
- Baking soda
- Salt
- Mini Semi Sweet chocolate chips

You can omit the food coloring, but I like that they're green because it's festive for the Saint Patrick's Day holiday! I feel that the green food coloring is also to insinuate that these cookies are minty - so no one is surprised when they take a bite out of one!
How to Make this Mint Chocolate Chip Cookies Recipe
The key to this festive Saint Patrick's Day Cookie recipe is to use high quality ingredients; such as a good quality butter and premium semi sweet chocolate chips. This will really make a difference in the overall flavor of your cookies!
Preheat your oven to 375 degrees and line a cookie sheet with parchment paper. Set it aside.
Add your butter and sugar to a mixing bowl and beat them well. Add in your egg and sour cream and beat well.
Next you will beat in the peppermint oil and green food coloring until it is all combined well.
Mix the dry ingredients together in a small bowl and then and add them to your mixer with the other ingredients.
Mix this all together just until combined. Notice I said to MIX it together - you do not want to beat the dough at this point.
Fold in 1 cup of semi sweet chocolate chips.
Use a tablespoon portion cookie scoop to scoop batter onto prepared baking sheet.
Top each cookie with a few additional semi sweet chocolate chips and gently press them into the batter and then bake your cookies for 8 to 10 minutes or until the bottoms just begin to turn light golden brown.
Hint: Allow your cookies to cool on the cookie sheet for 2 minutes before removing them to cooling completely on a cooling rack.
Variations
Just as you are able to omit the green food coloring in this easy Mint Chocolate Chip Cookie Recipe, you can make other changes as well! These are YOUR cookies, after all, so you should make them to suit your tastebuds!
- Different chocolate chips - You can switch out the mini semi sweet chocolate chips with dark chocolate chips, milk chocolate chips or even white chocolate chips.
- Deluxe Cookies - If you would like a larger cookie, you can double the size of the raw cookie scoop and increase the baking time by 2-3 minutes.
- Not Minty - If you just want a green cookie but don't like the mint chocolate chip flavor, you can omit the peppermint oil.
- Make it nutty - You can add pecan pieces to the cookie dough in place of or in addition to the mini chocolate chips if you like this flavor profile!
