What Youll need to make Chocolate Mint Cookies
One of the things that I really love about our recipe is that we do not need any big fancy ingredients! This is a very simple cookie dough, and you don't even need cocoa powder or baking soda!
Many chocolate mint cookies all recipes variations require mint chips, chopped Andes mints or a cup unsweetened cocoa powder, but we are going to skip all of those specialty baking supplies and just use peppermint extract - which you may already have on hand if you have tried our Betty Crocker chocolate chip cookies with mint recipe!
Chocolate Mint Cookies Recipe Ingredients
- Unsalted butter - softened to room temperature for easier mixing
- Powdered Sugar - often called confectioner's sugar
- Semi Sweet Chocolate Baking Squares - I prefer Baker's brand
- Peppermint Extract
- All Purpose Flour - this can be bleached or unbleached flour

- Unsalted butter - softened to room temperature for easier mixing
- Powdered Sugar
- Milk
- Peppermint Extract
- Green Food Coloring
- Semi Sweet Mini Chocolate Chips (optional)

How to make Chocolate Mint Cookies
The first step in our instructions preheat oven to 350 degrees F and use nonstick cooking spray or parchment paper for prepared baking sheets.
In a large bowl, mix together the cup unsalted butter and the powdered sugar.
In a small bowl, melt the baking chocolate in the microwave. Once it is melted, immediately begin to stir in the Peppermint Extract.
Add the melted chocolate mixture to the butter mixture bowl. Add in the all purpose flour and stir your cookie dough well.
Take a tablespoon or two of the dough in your hands and shape into cookie dough balls.
Flatten them slightly before placing on a greased cookie sheet. Bake the cookies at 350 degrees for about 8 minutes. Let the cookies cool before removing them from the cookie sheet. Cool completely before adding the icing and drizzle.
How to make the Mint Filling and Chocolate Drizzle
In a medium sized bowl, melt the butter. Stir in the powdered sugar, milk, and peppermint extract and mix until frosting is creamy and smooth.
Add in a drop or two of green food coloring and mix until the color is combined.
Use this green frosting to frost your cooled cookies.
For an extra drizzle, melt a handful of chocolate chips in a small bowl, use a spoon to drizzle the melted chocolate over the finished cookies.
Chocolate Mint Cookies Recipe Variations and Substitutions
This recipe is versatile and can be adapted to include many variations, such as adding a few chocolate mint chunks, making it into chocolate mint biscuits, or making dark chocolate mint cookies.
- Dark chocolate mint cookies - You can easily replace the semi sweet chocolate in this recipe with dark chocolate baking squares to make a dark chocolate version of these cookies!
- Chocolate mint biscuits - If you would like to make a harder, crispier chocolate biscuit instead of a soft cookie, place all of the cookie dough together on your prepared baking sheets and press them down a little thinner. You can then add the "filling" by just drizzling it over the top of the biscuits once they are cooled.
- Mint chocolate chunk - For a deluxe version of this cookie recipe, you can add chopped Andes mints or bits of mint chocolate chunk to the top of the cookies once they are frosted and drizzled.
