I don’t know if Meatless Monday is still a trendy theme, but it never hurts to throw healthier, meatless options into your weekly diet.

How to Make this Vegetarian Mexican Quinoa Skillet Recipe for Meatless Monday
If you are not familiar with quinoa, where have you been? It is a great alternative to pasta or rice and comes in all kinds of varieties. It is so versatile!
Vegetarian Mexican Quinoa Skillet Recipe Ingredients:
- 1 tablespoon oil
- 1 tablespoon minced garlic
- 1 cup uncooked quinoa
- 1 cup vegetable broth
- 1 can, 15.25 oz, black beans, drained and rinsed
- 1 can, 15.25 oz, Mexican corn - this is corn seasoned with red and green peppers. You'll find it labeled as either Mexican Corn, Southwestern Corn or Fiesta Corn, depending on the brand.
- 1 can, 14.5 oz, diced tomatoes
- 1 package taco seasoning
- fresh chopped cilantro for serving

Vegetarian Mexican Quinoa Skillet Recipe Directions:
You are going to begin by adding the oil and garlic to a skillet and heat it on medium heat, cooking just until the garlic begins to brown.
Be careful not to overcook, as burnt garlic not only stinks up the entire house, but it tastes AWFUL! You want the garlic to be roasted, not burnt.
Next, you are going to stir in the quinoa, the vegetable broth, black beans, corn and tomatoes and mix it all together well.
Add in your taco seasoning and heat the entire mixture over medium high heat until the mixture begins to boil. Reduce heat to simmer and cover with a lid.
Stir occasionally while you allow it to cook for 25-30 minutes, or until the quinoa is translucent and soft.
Serve your easy Vegetarian Skillet meal topped with chopped fresh cilantro. You can add a dollop of sour cream if you desire upon serving.

Ingredients

This is not vegetarian, considering chicken broth is an ingredient.
