You can even add a little bit of spice by adding a can of green chilies – like Rotel – hot sauce or even a hot taco seasoning if it needs more kick. While my family prefers a medium spice, I know that many love the heat of Mexican dishes and welcome all the heat they can get!

I personally am not a big huge fan of quinoa, but as everyone else on the planet seems to be, I thought it would be fun to share a few recipes with you guys that incorporate quinoa as the main ingredient, like the Vegetarian Pesto Quinoa Bake Recipe and Quinoa Pizza Bites Recipe I shared a while back. 

I don’t know if Meatless Monday is still a trendy theme, but it never hurts to throw healthier, meatless options into your weekly diet. Not only do you save money on groceries by eliminating meat every once in a while, but there are so many health benefits to increasing the vegetables and healthy grains in your diet!

Why not shake things up once in a while and step beyond the “salad for dinner” option and try a meatless recipe like this Mexican Quinoa Skillet Recipe?

Meatless Monday: Mexican Quinoa Skillet Recipe

Mexican Quinoa Skillet Recipe Ingredients: 

  • 1 tablespoon oil
  • 1 tablespoon minced garlic
  • 1 cup uncooked quinoa
  • 1 cup vegetable broth
  • 1 can, 15.25 oz, black beans, drained and rinsed
  • 1 can, 15.25 oz, fiesta corn (corn seasoned with red and green peppers)
  • 1 can, 14.5 oz, diced tomatoes
  • 1 package taco seasoning
  • fresh chopped cilantro for serving

If you are not familiar with quinoa, where have you been? It is a great alternative to pasta or rice and comes in all kinds of varieties. It is so versatile! You can find quinoa in in the rice section of your local grocery store, or find a wide assortment of quinoa on Amazon.com. I just love that we can have food delivered right to our doors through Amazon!



Mexican Quinoa Skillet Recipe Directions: 

You are going to begin by adding the oil and garlic to a skillet and heat it on medium heat, cooking just until the garlic begins to brown. Be careful not to overcook, as burnt garlic not only stinks up the entire house, but it tastes AWFUL! You want the garlic to be roasted, not burnt.

Next, you are going to stir in the quinoa, the vegetable broth, black beans, corn and tomatoes and mix it all together well.

Add in your taco seasoning and heat the entire mixture over medium high heat until the mixture begins to boil. Reduce heat to simmer and cover with a lid.

Stir your Meatless Monday Mexican Quinoa Skillet Recipe occasionally while you allow it to cook for 25-30 minutes, or until the quinoa is translucent and soft.

Serve your Meatless Monday Mexican Quinoa Skillet Recipe topped with chopped fresh cilantro. You can add a dollop of sour cream if you desire upon serving.

Mexican Quinoa Skillet Recipe

Ingredients

Instructions

Of course, not everything needs to be cooked in the slow cooker, and that is where a Skillet or big pot comes in handy!
