This Quinoa Pizza Bites Recipe is such an easy weekday meal, and it is full of healthy goodness! It is absolutely the quickest, easiest Meatless Monday meal! Now, this particular version has pepperoni, but you can make it vegetarian simply by omitting the pepperoni. Not only do you save money on groceries by eliminating a protein as the main ingredient in your dinner menu every once in a while, but there are so many health benefits to increasing the vegetables and healthy grains in your diet! Why not shake things up once in a while and step beyond the “sandwiches for dinner” go-to and try something like this Quinoa Pizza Bites Recipe?

Quinoa Pizza Bites Recipe

Quinoa Pizza Bites Ingredients 

  • 2 C. cooked Quinoa (1 C. quinoa cooked in 1 3/4 cups of water or chicken broth)
  • 2 eggs, whisked 
  • 1 bunch of green onions, diced (optional)
  • 1 C. shredded mozzarella cheese
  • 8-10 basil leaves, torn into small pieces
  • 1/2 package of pepperoni, cut into small pieces
  • 1 tsp. Italian seasoning

This Quinoa Pizza Bites Recipe is such an easy weekday meal, and it is full of healthy goodness! It is absolutely the quickest, easiest Meatless Monday meal!

Directions 

Preheat the oven to 350 degrees and spray a mini muffin tin with non-stick cooking spray. **You could also use a regular muffin tin. 

Combine all the ingredients mixing well.

Use a spoon to scoop the mixture into the muffin tins.

Bake 20-25 minutes until golden brown and heated through. 

Serve with your favorite pizza sauce for dipping.

Ingredients
