How to Make this Vegetarian Pesto Quinoa Bake Recipe
Pesto Quinoa Bake Ingredients
- 2 C. cooked Quinoa (1 C. quinoa cooked in 1 ¾ cups of water or chicken broth)
- 2 eggs, whisked
- 2 C. fresh baby spinach tightly packed and chopped
- ½ C. pesto
- 1 C. fresh parmesan cheese, grated
- ½ C. shredded mozzarella cheese + extra for sprinkling on top.

Directions for making our Pesto Quinoa Bake
Firstly, preheat the oven to 350 degrees F and spray a small baking dish non-stick cooking spray.
Combine all the ingredients and pour into the baking dish and add an extra handful of shredded mozzarella on top.
Bake for 20 minutes or until heated through.
