- Head of cauliflower, pulsed in a food processor until rice-like
- Tomato, diced (do not drain juice)
- Onion, diced
- Garlic cloves, minced
- Lime juice
- Chili powder
- Chipotle chili pepper powder
- Salt
- Cayenne pepper
- Cilantro, chopped

Directions
Follow these step-by-step pictures and you'll have a plate of delicious keto Spanish rice ready in no time at all!
First, dice the onion.
In a medium skillet over medium heat, sauté your onions and garlic in 1-2 teaspoons olive oil for 2 minutes.
Add your Cauliflower to a food processor and process until it is rice-sized.
Add in your cauliflower to the skillet and cook until it is slightly browned.
Add in your tomatoes, lime juice and spices into the skillet and cook for approximately 5-7 minutes. Lastly, fold in the fresh cilantro.

- ½ cauliflower head, pulsed in a food processor until rice-like
- 1 tomato diced (do not drain juice)
- ½ onion diced
- 2 garlic cloves minced
- 1 tablespoon lime juice
- ½ tsp. chili powder

Instructions
