Shaved Brussel Spouts & Parmesan Salad Recipe Ingredients
- 1 pound fresh brussel sprouts, stems removed and shaved**
- ¼ cup red onion, sliced thinly
- ¼ cup olive oil
- 3 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- salt and pepper to taste

Shaved Brussel Spouts Parmesan Salad Recipe Directions
In a large bowl, whisk together the olive oil, vinegar, honey and mustard. Taste it a bit and then add the salt and pepper to your liking.
Add the shaved brussel sprouts and red onion and toss thoroughly to combine. Taste again and adjust seasonings.
Cover this recipe and store in the refrigerator for 2-3 hours, stirring often. You really want to give this salad a chance for the flavors to marinate into the veggies. Believe me, it is totally worth the wait AND this also means that this salad is an easy one to make a day ahead of time in preparation for a gathering or potluck.
Serve with fresh grated Parmesan on top!
To shave the brussels sprouts I use a food processor, but you can also use a hand grater or knife.
