My biggest tip in making this super easy salad is to pick really ripe, juicy watermelon! Most of the flavor in this salad is derived from the watermelon and you want chunks that are juicy and ripe but not soft – they need to be firm and crisp.

Watermelon Mandarin Mint Salad Recipe
- 6 cups cubed watermelon (buy seedless if possible, otherwise remove seeds)
- 1 can (11oz) mandarin oranges, drained
- 1/4 red onion, sliced into thin strips
- 1/4 cup feta cheese
- 2 tablespoons fresh mint, chopped
Place all of your ingredients into a large bowl. Toss them to mix well and serve immediately!
