It really does not matter what diet you are on, this dish is perfect for literally everyone! Also, you will be using the oil from the sun dried tomatoes instead of the typical oil you would use in most recipes.
I mean, how amazing is that? I love how the sun dried tomatoes are so sweet and bold in flavor. They really do add so much to this dish. I really love the way the sun dried tomatoes compliment the green beans, as they are usually prepared the same way and so boring.
This baked string beans dish TRANSFORMS the green beans! I have to admit that I am a renew fan! Since the green beans are frozen, you do not have to worry about them withering away in your fridge or going bad. Of course, you are welcome to use fresh green beans too!

- Julienne Cut Sun Dried Tomatoes - you want the kind that is in olive oil, as you will need that oil to cook your onions!
- sweet onion, chopped
- minced garlic
- freshly ground black pepper
- Frozen French Cut Green Beans or fresh green beans

Instructions for how to make our roasted Green Beans and Tomatoes
You are going to begin by draining the oil from the tomatoes into a skillet. Just set the jar of sundried tomatoes aside for now.
Next, add the chopped sweet onions to the hot skillet with the oil from the sundried tomatoes. Go ahead and cook them for 3 to 4 minutes, or until the onions begin to soften and turn translucent.
Now you are going to stir in the minced garlic and the sundried tomatoes from the jar, and add the ground black pepper.
Cook your tomatoes mixture for an 2 additional minutes.
Finally, you are going to add the green beans to your skillet and cover it with the lid.
Cook it covered for 8 to 10 minutes, making sure to stir it frequently.

Ingredients
- 7 oz jar Julienne Cut Sun Dried Tomatoes
- 1 sweet onion chopped
- 1 tablespoon minced garlic
- ½ teaspoon black pepper
- 1 16 oz Frozen French Cut Green Beans
Instructions
- First, drain the oil from the sun dried tomatoes into a skillet. Set the jar of tomatoes aside.
- Next, add the chopped onions to the pan and cook for 3-4 minutes or until onions begin to soften.
- Then, stir in the minced garlic, tomatoes and the black pepper. Heat for 2 additional minutes.
- Add the frozen package of green beans and cook, covered for 8-10 minutes, stirring frequently.
- Finally, uncover and cook an additional 2-3 minutes if a lot of liquid still remains.
