What The Heck Do You Do With Swiss Chard Other Than Salad? You Add Bacon, Cheese and Make A Gratin!

So, remember I was saying I get the local, organic produce boxes delivered each week? I was so excited to see this week's had Swiss Chard. Because, you guys, they use that on Chopped!
But then it hit me... I have no clue what to actually do with this gorg leafy green! Maybe that's why it's always on chopped? Off to the all knowing Google I went. All I found were a bunch of salads.
Don't get me wrong, my girlish figure says I could totally eat more salad. But, but, I wanted to cook something! Because Swiss Chard!! It just seemed so... fancy... ???

I was determined to cook this stuff and I had bacon (obviously) so I could wing a cheesy kind of dish, right? This is what I threw together....
How to make our Cheesy Bacon and Swiss Chard Gratin Recipe
Ingredients
- 1 LB Swiss Chard wash, drain, chop the size of spinach leaves
- ½ PKG Bacon cook, drain, crumble - save bacon fat!
- ½ Cup Italian Seasoned Breadcrumbs
- 1 Cup Heavy Cream
- 2 Cloves Garlic crushed
- ½ Cup Shredded Mozzarella Cheese
- 2 TBS Butter
- Salt & Pepper to taste
Instructions
Pre-heat oven to *400. In the pan you cooked the bacon in, the one with the fat left over, toss in your chopped Swiss Chard and butter. Cook until wilted. About 3 minutes.
While that's going, bring cream and garlic to a boil in a medium saucepan. Remove from heat. Stir in salt and pepper.
Place wilted chard in an oven safe dish. I like my cast iron pan.
Pour warmed cream mixture over the top. Add bacon and cheese over the top of that evenly.
Finally, sprinkle with breadcrumbs and top off with a bit more salt & pepper. Bake for 20 minutes or until top is all bubbly, warm, brown, yummy.
Serve hot!
And that's kind of how I would play it if I opened up my basket and got Swiss Chard on Chopped!
No salad. Big girl cooking!
My mother in law says it's a common dish for Fall and a great holiday side dish!
Also, any dish you'd use with greens (collard or otherwise) you can absolutely sub these in! Who knew?
