- ยฝ cup chopped onion
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1 teaspoon salt

- 1 can, 14.5 oz, diced tomatoes (do not drain)
- 1 can, 15 oz, black beans, drained and rinsed
- 1 can, 15.25 oz, corn, drained
- 1 can, 10 oz, red enchilada sauce
- 1 small can, 4 oz, Hatch green chiles
- 4 cups beef broth
- sour cream
- shredded cheddar cheese
- tortilla strips

Directions for how to make this easy soup recipe
First, add your ground beef and chopped onion to a large stock pot or a Dutch oven. Heat over medium high heat until the ground beef is browned and the onion is translucent. Then drain the grease and return the beef and onion to the pan.

Next, add your garlic powder, onion powder, cumin, salt and pepper.

Then stir in the diced tomatoes, black beans, corn, enchilada sauce, greenย chiliesย and broth.

Heat over medium high heat and cook until it begins to boil. Then cover the pot with the lid and reduce the heat to simmer and cook at simmering for 30 minutes.

Serve topped with sour cream, cheddar cheese and tortilla trips.
