- 1 lb ground beef
- ½ cup onion chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 14.5 oz diced tomatoes (do not drain)
- 15 oz black beans drained and rinsed
- 15.25 oz corn drained
- 10 oz red enchilada sauce
- 4 oz green chilies
- 4 cups beef broth
- sour cream
- shredded cheddar cheese
- tortilla strips
Add ground beef and onion in a large stock pot or dutch oven.
Heat over medium high heat until beef is browned and onion is translucent. Drain grease and return beef and onion to pan.
Add garlic powder, onion powder, cumin, salt and pepper.
Stir in tomatoes, black beans, corn, enchilada sauce, green chilies and broth.
Heat over medium high heat until boiling.
Cover and reduce heat to simmer for 30 minutes.
Serve topped with sour cream, cheddar cheese and tortilla trips.
