Ingredients

  • 1 lb ground beef
  • ½ cup onion chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 14.5 oz diced tomatoes (do not drain)
  • 15 oz black beans drained and rinsed
  • 15.25 oz corn drained
  • 10 oz red enchilada sauce
  • 4 oz green chilies
  • 4 cups beef broth
  • sour cream
  • shredded cheddar cheese
  • tortilla strips

Instructions

  • Add ground beef and onion in a large stock pot or dutch oven.
  • Heat over medium high heat until beef is browned and onion is translucent. Drain grease and return beef and onion to pan.
  • Add garlic powder, onion powder, cumin, salt and pepper.
  • Stir in tomatoes, black beans, corn, enchilada sauce, green chilies and broth.
  • Heat over medium high heat until boiling.
  • Cover and reduce heat to simmer for 30 minutes.
  • Serve topped with sour cream, cheddar cheese and tortilla trips.
