How To Make Crispy Accordion Potatoes
Start by peeling the potatoes and rinsing them under cold water. Pat them dry using kitchen towels to remove any excess moisture.
Take a potato and slice it into approximately quarter- to half-inch thick rounds. Place the potato slices on a cutting board and use a sharp knife to make thin vertical cuts on one side.
To prevent slicing all the way through, place chopsticks or wooden skewers on each side of the potato as a guide. These will act as a stopper and help create the accordion effect.
How to make the Diagonal Cuts
Gently flip the potato slices over, so the side with the vertical cuts is facing down.
Make diagonal cuts on the other side of the potato, again being careful not to cut all the way through.

Instructions
