I love PEEPS so much that I look forward to Easter each year just because I know that there will be a bevy of beautiful, puffy little PEEPS lining the store shelves all month. I am NEVER disappointed. Each year, there are new shapes, new flavors – did you ever taste the birthday cake PEEPS!?!?!??!?! – and I save up all of my carbs so that I can stuff my face with these sugary little angels sent from heaven. I used to do so much cooking and baking around the holidays, but as I’ve gotten older, gotten divorced, and Angeline’s grown up…I have kind of lost my love for baking. I know, I know…I hope to regain it soon, but in the meantime, I think these Easter Sweets: PEEPS Cheesecake Bars Recipe will have to do.

I mean, there are PEEPS in them, guys. And like, Oreos and stuff. We used Golden Oreos but you can really use any assortment you prefer – just keep in mind that the coloring will be different if you don’t use the same ingredients we used to take these photos.

Easter Sweets: PEEPS Cheesecake Bars Recipe

Ingredients:

  • 8 Golden Oreos, finely crushed
  • 8 Golden Oreos, coarsely crushed
  • 2 tablespoons melted butter
  • 4 ounces cream cheese, softened
  • 1/4 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla
  • Marshmallow Peeps
  • Edible Easter Grass
  • 4, 4 ounce mason jars

PEEPS Cheesecake Bars Recipe 3

Directions:

Mix finely crushed Oreos and melted butter together.

Divide evenly and spoon into mason jars. Press firmly in the bottom with a tart shaper or the back of a spoon.

Add cream cheese, whipping cream, powdered sugar and vanilla to a mixing bowl. Beat until mixture is smooth.

Divide evenly among each jar (about 3 tablespoons per jar) and smooth.

Top with coarsely crushed Oreos and edible Easter grass cut into 1″ strips. Top with a marshmallow peep.

Refrigerate until ready to serve. Makes 4
