    Our Instant Pot Recipe for Macaroni and Tomatoes uses simple, staple pantry ingredients. Instead, this recipe for macaroni and tomatoes tastes like a gourmet Italian pasta, or a homemade meatless goulash! It's the perfect vegetarian dinner recipe, and it's a vegan dinner recipe too if you don't use Parmesan cheese on top!

    How To Make This Macaroni and Tomatoes Recipe

    All you need is an Instant Pot and the ingredients and your recipe for Macaroni and Tomatoes dinner is just 30 minutes away!

    Ingredients Needed To Make Macaroni and Tomatoes

    • 1 Tablespoon of Olive oil
    • 1 sweet onion - chopped
    • 1 Tablespoon of minced garlic
    • 1 Tablespoon of fresh basil - minced
    • 1 teaspoon of garlic salt
    • 1 Tablespoon of Italian seasoning
    • 1 teaspoon of ground oregano
    • ½ teaspoon of pepper
    • ¼ cup of Brown sugar
    • 4 cups of chicken broth
    • 1 large can of Stewed tomatoes (28 ounces)
    • 1 pound of large elbow macaroni
    • Parmesan cheese - for topping

    Macaroni and Tomatoes Recipe Directions

    You're going to begin making this Recipe for Macaroni and Tomatoes by pressing the Saute button on the Instant Pot, and add the Olive oil, and chopped onion, and saute until the onion is golden brown (about 5 minutes). 

    Turn off the saute setting, and add the minced garlic, and fresh basil, stir. 

    Add the chicken broth, stewed tomatoes, garlic salt, Italian seasoning, ground oregano, pepper, and brown sugar, and stir well. 

    Add the Elbow Macaroni, and stir again, scraping the bottom of the pot, loosening any onion bits. 

    Place the lid on the Instant Pot, and make sure the pressure valve is set to 'SEALING', and press the MANUAL button, and set the time to 5 minutes. 

    When the Instant Pot is done cooking, beeps and goes to off, do a quick release, by turning the pressure valve to 'VENTING' from SEALING. 

    When all the pressure has been released, and the float valve has dropped down, remove the lid to the Instant Pot, and stir the macaroni and tomatoes. 

    Serve immediately, topped with Parmesan cheese.  Enjoy!

    NOTE:  Do not add Parmesan cheese to the Instant Pot, as it will curdle during cooking, and ruin the dish. 

    Add it to each serving after the dish is plated.

    You can also top this Recipe for Macaroni and Tomatoes with crumbled bacon, or shredded cheeses as desired.

    What To Serve With Macaroni and Tomatoes

    Enjoy this as a quick and easy lunch or a meatless dinner. It also makes a tasty side dish with your favorite entree.

    If you're going to eat it as a side dish, then I suggest serving it with garlic turkey sliders or some air fryer garlic parmesan chicken wings.

    Top Tips For Making Macaroni in the Instant Pot

    My biggest tip when you're cooking pasta in the Instant Pot is to make sure you use enough liquid. Make sure you completely cover the macaroni with the chicken broth.

    It's also important that you don't burn the garlic and basil. The Instant Pot gets really hot - even when it's on the saute mode. It will only take a few minutes for it to turn the garlic golden brown.
