No Bake Pumpkin Cookies
This no bake pumpkin cookie recipe is the perfect fall treat. Loaded with pumpkin, chocolate, and peanut butter flavors and so chewy thanks to the oats, this is a classic drop cookie for autumn.

½ cup peanut butter ½ butter ½ cup milk 2 cups sugar ⅓ cup pumpkin purée 5 T cocoa powder 4 Cups dry oats
In a medium sized saucepan, add cocoa powder, butter, milk, and sugar
On medium heat, bring ingredients to a boil, mix, and boil for 3 minutes
While waiting, in a large mixing bowl, add oats, pumpkin purée, and peanut butter and set aside
Now that your mix has boiled for 3 minutes, turn off heat and pour over the oat mix
Mix well and scoop a spoonful at a time onto a parchment paper lined pan
After you scooped out all your cookie mix, let cookies cool for a couple hours or until hardened (put in the fridge for a quicker result)
