    This no bake pumpkin cookie recipe is the perfect fall treat. Loaded with pumpkin, chocolate, and peanut butter flavors and so chewy thanks to the oats, this is a classic drop cookie for autumn.

    I love fall. I may live in Florida, but believe it or not, we do have a fall season. We even have changing leaves.

    When fall, such as it is in Florida, rolls around, I love making delicious pumpkin treats, and these no bake pumpkin cookies are one of my favorites.

    No Bake Pumpkin Cookie Recipe

    These cookies combine the classic drop cookie with pumpkin puree to make a rich, chewy cookie that's infused with the flavor of fall.

    The combo of chocolate, peanut butter, and oats works perfectly with the pumpkin flavor, and they're always a big hit when I serve them.

    Ingredients you will need to make this No Bake Pumpkin Cookie

    You'll only need a few basic kitchen staples to make this recipe. I wouldn't be surprised if the pumpkin puree is the only thing you'll have to buy at the store.

    • ½ cup peanut butter
    • ½ butter
    • ½ cup milk
    • 2 cups sugar
    • ⅓ cup pumpkin purée
    • 5 T cocoa powder
    • 4 Cups dry oats

    How to Make No Bake Pumpkin Cookie

    Like any drop cookie, these pumpkin cookies are super easy to make. It only takes a few minutes of prep and a little scooping. In fact, the hardest part of this recipe is waiting for the cookies to cool!

    The highlights are here, but just like the ingredients, you'll find specifics in the recipe card at the end of the post.

    1: Boil the cocoa powder, milk, butter, and sugar.

    2: Mix the remaining ingredients in a large mixing bowl and pour the hot chocolate mixture of it.

    3: Stir well and drop large spoonfuls onto a parchment paper-lined pan.

    4: Cool until hardened.

    Substitutions and Variations

    • Leave out the pumpkin for classic drop cookies.
    • Try adding a teaspoon of pumpkin spice.
    • For extra-rich cookies, use half and half in place of milk.

    Storage

    Room Temperature: Store in an air-tight container in a cool, dry place for up to 5 days.

    Refrigerator: Store for up to 2 weeks in an air-tight container.

    Freezer: Store for up to 2 months in an air-tight, freezer-safe container in single layers separated by parchment paper.

    What to Serve with No Bake Pumpkin Cookie

    This no bake pumpkin cookie is delicious with a glass of milk or a cup of coffee or tea. They're also a great addition to a larger party or holiday dessert spread alongside your other favorite sweets!

    Tips

    • Bring the milk mixture to a boil over medium heat. Don't rush it by cranking it up to high.
    • Mix these cookies thoroughly. The mixture is thick, so it's easy to accidentally leave pockets of unmixed ingredients.
    • You can pop these in the fridge to help them set faster.

    Ingredients
      

    • ½ cup peanut butter
    • ½ butter
    • ½ cup milk
    • 2 cups sugar
    • ⅓ cup pumpkin purée
    • 5 T cocoa powder
    • 4 Cups dry oats

    Instructions
     

    • In a medium sized saucepan, add cocoa powder, butter, milk, and sugar
    • On medium heat, bring ingredients to a boil, mix, and boil for 3 minutes
    • While waiting, in a large mixing bowl, add oats, pumpkin purée, and peanut butter and set aside
    • Now that your mix has boiled for 3 minutes, turn off heat and pour over the oat mix
    • Mix well and scoop a spoonful at a time onto a parchment paper lined pan
    • After you scooped out all your cookie mix, let cookies cool for a couple hours or until hardened (put in the fridge for a quicker result)
