    Stuffed Peppers With No Rice

We love this Vegetarian Stuffed Peppers With No Rice Recipe for Meatless Monday

Making stuffed bell peppers without rice is so much fun!

One of the fun things about this Easy Vegetarian Quinoa Dinner Recipe is that you can easily switch up the flavor profile by using different cheeses and salsas!

I'll be honest, I usually just make stuffed mushrooms, but after this recipe, I think that I need to begin stuffing ALL OF THE THINGS!

Green peppers, red peppers, sweet peppers, jalapenos, tomatoes! Hmmm...what else could I possibly stuff?

I personally am not a big huge fan of quinoa, but as everyone else on the planet seems to be, I thought it would be fun to share a few recipes with you guys that incorporate quinoa as the main ingredient, like the Vegetarian Pesto Quinoa Bake Recipe and Quinoa Pizza Bites Recipe I shared a while back.
