That's why I love the low carb lifestyle so much - it's all about a person's overall, long term HEALTH.
I am not one of those people who eats bacon, steaks and cheeseburgers every day on a low carb diet. My idea of a low carb diet mostly revolves around proteins, dairy, eggs and lots and lots of green veggies. I keep green beans, broccoli and salad fixings in my fridge at all times!
With my family's history of heart disease, there is no way I would ever do a diet that focused on and required me to consume large quantities of fat...yeah, I know that coconut oil and ghee are "healthy fats," but I am still not interested in having a heart attack.
While I can't speak against the KETO diet, I just know that it's not the diet for me. Besides, low carb has worked for me for over a decade, and as they say, "If it's not broken, don't fix it."

Ingredients needed to make this Low Carb Chicken Bacon Stuffed Tomatoes Recipe
- ¼ cup sour cream
- ¼ cup real mayonnaise
- 2 tablespoons dry ranch dressing
- 1 tablespoon Dijon mustard
- 1 cup cooked chicken, cut into small cubes
- 4 slices bacon, cooked and cut into small pieces, plus 2 tablespoons for topping
- 1 tablespoon chopped green onions
- 2 large tomatoes

Add your sour cream, mayonnaise, ranch dressing, mustard, chicken and bacon to a medium mixing bowl and mix it really well until it is completely combined and creamy. Do you find that you need new mixing bowls? Check these out!
Refrigerate this creamy mixture for one to two hours so that the flavors can mingle. Once you remove it from the fridge, stir it well.
Cut off the top of the tomato with a sharp knife and scoop out the seeds and flesh of the tomato with a tablespoon.
Scoop half of the chicken mixture into each tomato, like so. You are going to want it to be piled a little high on top, it just looks so much prettier that way!
Then top each tomato with a little bit of additional chopped bacon and a sprinkling of green onions before you serve them up.
Now, you can definitely make this Low Carb Chicken Bacon Stuffed Tomatoes recipe ahead of time and serve it later - just keep in mind that the longer the tomatoes are in your fridge, the softer they're going to get. I love a ripe, crisp tomato, so I like to eat mine right away, within a day or so.
If you have storage containers that are made for keeping produce fresh, you could store them for two or three days - just keep in mind that you should not add the additional bacon or scallions until you are getting ready to serve them, as they should be nice and fresh!
