Low Carb Broccoli Cheese Bake Recipe
The fall and winter holidays are quickly approaching, and I can't deny that I am really freaking excited. I LOVE HOLIDAYS.
I love the family gatherings, getting together with my girlfriends, all of the holiday shopping for the kids in the family...and oh, my oh my...the baking!
My family is notorious for big family potlucks, so my mom usually takes charge of the main protein (usually a ham or a chicken) and we girls (there are four daughters plus all of the husbands and cousins) bring the side dishes. It's really so much fun!
To say that I am excited about bringing a new dish to the family dinner would be a vast understatement! Broccoli has always been one of my favorite vegetables, especially since I began following a low carb diet about a decade ago.
It's tasty, it's filling and it is full of healthy stuff that our bodies actually need in order to function properly.

Our Broccoli Cheese Casserole is Pretty Low Carb!
This isn't a NO CARB dish, but it is pretty great for a low carb diet considering most of the ingredients are low carb.
Only the cream of broccoli soup and French's fried onions really have a substantial about of carbs.
French's Onions only have 3 grams of carbs for 2 tablespoons, which is really in line with a pretty low carb diet when you think about what's on a Thanksgiving menu...the cream of broccoli soup is the real culprit, with about 9 grams of carbs for ½ a cup.
Overall, this Low Carb Broccoli Cheese Bake Recipe is pretty low carb - just skip the mashed potatoes (I know it's hard!) and you'll be fine!

Ingredients needed to make this Low Carb Broccoli Cheese Bake recipe
- 2 packages, 16 ounces each, frozen broccoli
- ½ cup diced onion
- 1 tablespoon butter
- 1 can condensed cream of broccoli soup
- 1 teaspoon Dijon mustard
- 4 hard boiled eggs, sliced to ⅛"
- 2 cups shredded cheddar cheese
- 1 can French's fried onions

Directions for making this Low Carb Broccoli Cheese Bake recipe
Preheat oven to 350.
Cook broccoli according to package directions.
In a skillet, add onion and butter and heat 3-5 minutes or until onion is tender. Add soup and mustard and mix well. Heat until the mixture just begins to bubble.
In a casserole dish, arrange half of the broccoli in the bottom. Add half of the soup mixture, half of the eggs and half of the cheese. Repeat layer.
Bake for 20 minutes. Sprinkle on onions and bake for an additional 5 minutes.
Let set for a few minutes before serving.
