This Junior Mints Valentine Shortbread Cookies Recipe is just perfect with coffee as a special Valentine's Day treat for yourself or loved ones.
The heart shaped Junior Mints are the Valentine's Day edition - you should pick some up even if you don't celebrate Valentine's Day because they are just so cute!
This easy Valentine's Shortbread Cookie was inspired by my Frosted Chocolate Heart Cookies Recipe that I made a while ago.

- Butter, softened
- Powdered sugar
- Peppermint extract
- Egg yolk
- Americolor Soft Gel Paste in Red Red Color
- All Purpose flour
- Baking powder
- Salt
- Valentine Junior Mints
How to Make this Junior Mint Cookies Recipe
This is quite an Easy Valentine's Day Dessert to make, and can be customized to suite any holiday!
Preheat your oven to 350 and line a baking sheet with parchment paper.
Combine butter, powdered sugar, peppermint extract, egg yolk and color paste in a mixing bowl
Beat on medium speed for about a minute. Stir in flour, baking powder and salt.
Roll dough into teaspoon size balls and place onto a baking sheet.
Bake for 10 minutes or until set and lightly browned on the bottom. Remove from oven and let set for 2 minutes.
Place one Junior Mint candy on the cookie and gently press into the center.
Hint: If you aren't able to find the Valentine's Day Edition heart shaped Junior Mints in your local stores, you can easily find it on Amazon.com!
Substitutions
If you can't find - or don't want to use - the heart shaped Junior Mints candies, you can use the regular Junior Mints or simply leave the Junior Mints out altogether and just have a pink peppermint-flavored shortbread cookie.
- Saint Patrick's Day Variation - instead of using red food coloring, use green and then use the regular Junior Mints to make this a Saint Patrick's Day Shortbread Cookie!
- Easter Variation - You can use pink, purple, blue or yellow food coloring to make this fun shortbread cookie for Easter!
- Christmas Variation - Just like with the Saint Patrick's Day idea, use green food coloring and make this a Christmas shortbread cookie!
