How to Make Christmas Vegan Cookies

Ingredients you'll need to make our Christmas Vegan Cookies
- 1.5 cups unbleached flour
- 1 teaspoon baking soda
- 1 teaspoon sea salt or pink Himalayan salt
- ¾ cup organic coconut oil, softened
- 1.25 cups light brown sugar
- ¼ cup pure maple syrup
- ⅔ cup chopped to crushed walnuts
- 1 tablespoon flax meal (ground flax seeds) mixed with 3 tablespoons warm almond milk OR 1 egg or plant based egg substitute.

Directions for how to make our Christmas Vegan Cookies
If using the flax meal and warm almond milk, mix together and let sit for about 5 to 10 minutes to thicken.
Preheat oven to 350 degrees F and line a 9 x 11 baking sheet or tray with parchment paper (not wax paper), I find going up the sides helps to lift the baked cookie bar out of the tray after.
For this bar I actually combine all ingredients at once and mix on medium low until just combined.
The batter should be thick and hold together well, maybe just a tiny bit oily and crumbly at the same time.
Press evening into the lined baking tray.
Bake for 30 to 35 minutes or until the top is golden brown and the center is just baked through.
Allow to cool on a rack before using your favorite cookie cutters to create perfectly themed or seasonal treats.
We do this while the large bar is on a larger cutting board.
This can be a great project for little ones to help with while you supervise.
These should keep well for a few days out or freeze really well!
