Regardless of your dietary restrictions, I think that it is safe to say that EVERYONE loves cookies! There are so many food allergies out there, as well as special diets - can we say KETO, PALEO, LOW CARB, GLUTEN FREE, etc? - but where there is a will, there is a way! My friend created this Delish Chewy Vegan Cookies Recipe due to her son's extensive food allergies (many of the Vegan and Gluten and/or Diary Free recipes I share are contributed by her) and I am so excited to share it with you today!

So may people nowadays have opted to go Vegan! As I mentioned above, there are so many different food allergies out there as well as health restrictions due to certain ailments. This Delish Chewy vegan Cookie Recipe is amazing all around because so many people can eat these cookies without worry! The ingredients in the=is recipe is also good if you are on a diet as it uses flax seed which is super beneficial for weight loss. Combined with using brown sugar vs white sugar and whole wheat flour vs white flour, the health benefits far exceed the typical cookie recipes out there. Not to mention your digestive tract will run much more smoothly if you get my drift. All of this WITHOUT sacrificing the amazing sweet taste a cookie should have. This recipe delivers it all! These are great to make for pretty much every occasion, and you don;t have to worry about someone having a reaction. Great for the office, classrooms, bake sales...you name it! I made these for my nieces school bake sale the day before the event (I used water instead as some children have a nut allergy) and they were easy to store and just as delicious and fresh as the day I made them! Be careful not to over mix the ingredients and remove from the oven when they look cooked well enough so the bottoms do not get too dark. You can also make these ahead of time and freeze the batter, or make a small batch and freeze the unused batter for another day! Please make sure you share this recipe with others and enjoy!

Delish Chewy Vegan Cookies Recipe Ingredients
1 cup coconut oil, soft
1 and ¾ cups brown sugar
2 ¼ cups flour (I used 1 ¼ white and 1 cup whole wheat but you could use all white flour)
½ teaspoon baking soda
¼ teaspoon baking powder
1 teaspoon sea salt
¾ cup oats
dash of pure vanilla extract
2.5 tablespoons ground flax meal mixed with ¼ cup almond milk or water (we always use almond milk, other nut milks would likely work as well). Let sit for about 10 minutes until the flax meal has absorbed the liquid and is noticeably thicker.
Delish Chewy Vegan Cookies Recipe Directions
Preheat your oven to 375 degrees and line a baking sheet with parchment paper (not wax paper). In a stand mixer combine the wet ingredients until smooth then slowly mix in the dry. Be careful to not over mix the batter.
Make uniform sized balls and place them on the parchment paper. They will spread only a little bit.
Bake for 8-12 minutes depending on how your oven heats and the size of the cookies.
We find these to be the best when you pull them from the oven before they look like they are done enough, otherwise they tend to be a little dark on the bottom. Let cool on a clean, dry counter for about 10 minutes (if you can wait that long). Cool completely before putting in air tight containers. This batter also freezes really well if you want to save some for another time.
