    This Easy Chicken Enchiladas Recipe is the perfect weeknight meal for those crazy busy nights! You can prepare this chicken enchilada recipe and have it on the table in just about 30 minutes! It's bound to be one of your new favorite dinner recipes!

    I have tons of sympathy for most of you still buried under a ton of winter coats and frigid temps. But, here in Miami, we're pretty lucky and spending our time outside sunning and fun-ing.

    None of that digging out from snow drifts going on here. While you can't wait to get inside and warm up, we're rushing out to enjoy the Spring-like temps. (sorry, not sorry) This was inspired by my Pizza Roll Casserole recipe on this site, and pairs well with this amazing Cornbread recipe.

    This Easy Weeknight Chicken Enchiladas Recipe is perfect no mater which coast you're hailing from! It is so quick and easy, which is a lifesaver for those folks who are tired of shoveling and it will be on the dinner table in under 30 minutes.

    It is just perfect for those of us rushing our after dinner to catch the perfect sunset! This Easy Chicken Enchiladas Recipe has just a bit of spice for flavor and lots and lots of cheesy goodness that I promise your whole family will just love.

    Who doesn't love a bit of cheesy goodness? The kids will be sure to love this dish, whereas they might normally shy away from enchiladas. 

    How to make Chicken Enchiladas

    How to Make this Easy Weeknight Chicken Enchiladas Recipe

    Ingredients needed to make this Easy Weeknight Chicken Enchiladas Recipe

    • 2 Cups Shredded Chicken
    • 2 ½ Cups Shredded Colby Jack Cheese
    • 1 Cup Salsa (your favorite brand)
    • 4 Green onions, thinly sliced
    • 1 teas. Chili Powder
    • ½ teas. Garlic Powder
    • ½ teas. Salt
    • ½ teas. Black Pepper
    • 9-11 Taco size Flour Tortillas
    • 3 Tbsp. Butter
    • 3 Tbsp. Flour
    • 15 oz. Can Chicken Broth or Stock
    • 1 Cup Sour Cream
    • Optional Cilantro for Garnish

    Instructions for making this Easy Weeknight Chicken Enchiladas Recipe

    Preheat the oven to 350˚.

    In bowl combine the Chicken, 2 cups Cheese, Salsa, Onions, Chili powder, Garlic powder, Salt and Pepper.

    Place 3-4 Tbsp. of the Chicken mixture onto a Tortilla, I use a ¼ cup measuring cup loosely packed.  Tightly roll the Tortilla spreading the mixture across the entire length of the roll.  Place in a lightly greased 13x9 inch baking dish seam side down. Repeat with the remaining tortillas and mixture until you run out of either ingredients or room in the pan.

    In a small sauce pan, melt the butter over medium heat. Sprinkle in the flour over the butter and whisk it constantly for 2 minutes.

    Then begin to slowly add in the broth to the pan, making sure to constantly stir it so that it does not clump. Once this mixture begins to thicken, you are going to add in the sour cream and bring it to a simmer.

    Then slowly pour the mixture over the tortillas in the baking dish, making sure that all of the sides and tops are evenly covered and evenly coated.

    Sprinkle the remaining cheese over the top of your chicken enchiladas and bake at 350˚ until bubbly, about 20-25 minutes. 

    Serve this dish while still hot and garnish with a little bit of fresh cilantro for the best flavor!

    Ingredients
      

    • 2 Cups Shredded Chicken pre-cooked, I use deli made
    • 2 ½ Cups Shredded Colby Jack Cheese
    • 1 Cup Salsa pick your favorite brand
    • 4 pieces Green onions thinly sliced
    • 1 teaspoon Chili Powder
    • ½ teaspoon Garlic Powder
    • ½ teaspoon Salt
    • ½ teaspoon Black Pepper
    • 9-11 whole Taco size Flour Tortillas
    • 3 teaspoon Butter
    • 3 tablespoon Flour
    • 15 oz. Can Chicken Broth or Stock
    • 1 Cup Sour Cream
    • 1 tbs Optional Cilantro for Garnish

    • Slowly add the Broth to the pan stirring constantly.
    • Once thickened add the Sour cream and bring to a simmer. Pour the mixture over the Tortillas in the baking dish ensuring the sides and tops are covered and coated.
    • Sprinkle the remaining cheese over the top and bake at 350˚ until bubbly, 20 minutes.
    • Serve hot.
    • Optional garnish with a bit of Cilantro.

      This year in Oregon we have also had some oddly Spring-like weather... and t-shirt weather! Chicken Enchiladas are one of my favorite meals and one that my husband can't turn down. I like to make a few extra trays of them to freeze for later, too!

      the sauce was VERY bland but it was an easy fix , this whole dish was easy to change to how we liked it ... as a basic dish to start with this was great
