I seriously love my job, don’t get me wrong. But there is an issue that I face as a blogger -I’m sure all work-at-home parents face the same issue – when home is your work, it’s really hard to turn OFF at the end of the day! That’s why dinner time is so important to me; it’s a way for me to completely unplug from work and just enjoy my family. And of course, it’s always more cost-effective to cook dinner at home, rather than order out or go to a restaurant!
I’m not the only one who understands the importance of family dinner time! McCormick has used Google data to identify the top ten most searched for dinner recipes during 2012 and came up with ten fabulous, flavorful McCormick recipes!
I had a go at the Sour Cream Chicken Enchiladas before leaving with Angeline for Washington, DC this week. It was so easy, and pretty inexpensive to make, too!
McCormick Sour Cream Chicken Enchiladas

They were so easy to make that I actually ended up making them twice in the same day. I was suppsed to take a video while making them, and accidentally deleted the video before I posted it to Instagram!
So not only did we have a nice family dinner on Wednesday night, but Chris had a nice homemade meal waiting for him on Thursday – leftovers!
This Sour Cream Chicken Enchiladas recipe can be found at mccormick.com, but I’ll share it here as well! At under $1.75 per serving, these creamy chicken enchiladas will turn your dinner into a Mexican fiesta. What a great – and inexpensive – way to bring the family together for dinner!

McCormick Sour Cream Chicken Enchiladas
Ingredients
2 packages McCormick Enchilada Sauce Mix
3 1/2 cups milk
1 cup sour cream
1 can (4 1/2 ounces) chopped green chilis, drained
1 tablespoons oil, divided
1 pound boneless, skinless chicken breasts, cut into strips
1 medium onion, thinly sliced
1 medium bell pepper, cut into thin strips
10 flour tortillas
2 cups shredded Mexican cheese blend
Directions
Preheat oven to 325°F. Stir Sauce Mix and milk in medium saucepan. Stirring constantly, cook on medium heat 5 minutes or until thickened. Stir in sour cream and chiles; set aside.
Heat 1 tablespoon of the oil in large skillet on medium heat. Add chicken; cook and stir 3 minutes or until lightly browned. Remove from skillet. Add remaining 1 tablespoon oil to skillet. Add onion and bell pepper; cook and stir 10 minutes or until tender. Return chicken to skillet. Stir in 1/2 cup of the sauce.
Spread 1/2 cup of sauce in lightly greased 13×9-inch baking dish. Heat tortillas as directed on package.
Divide the chicken mixture evenly among each tortilla. Fold over tortillas sides; place seam-side down in baking dish. Pour remaining sauce over enchiladas. Sprinkle with cheese.
Bake 40 minutes or until heated through and cheese is melted.
