    Are you looking for something fun to make for brunch this weekend? Here is a super yummy Very Berry Coffee Cake Recipe!

    This Berry Coffee Cake is super good and easy to make with the help of cake mix and frozen (please remember to thaw them) berries!

    I was pleasantly surprised it didn't have a "cake mix taste" like some things do when you use cake mixes for recipes other than cake.

    Very Berry Coffee Cake Recipe

    The topping is nice and crunchy and the berries are soft and gooey. It's a great combination!

    You can use a single berry, so it's all strawberries or all blueberries. My frozen berry mix was strawberry, blueberry, raspberry and blackberry. So good!

    How to Make This Very Berry Coffee Cake Recipe

    Ingredients Needed to Make This Easy Fruity Coffee Cake Recipe:

    • 1 box, 15.25 oz, yellow cake mix
    • ½ cup brown sugar
    • 2 tablespoons cold butter
    • ½ cup chopped pecans (or walnuts)
    • ¼ cup flour
    • 2 eggs
    • 1 cup sour cream
    • 1 package, 12 oz, frozen mixed berries, thawed

    Directions for making this Easy Fruity Coffee Cake Recipe:

    Thaw fruit and drain, do not press, just drain the juices and then set them aside for later.

    Preheat your oven to 350 and grease a 9x13 baking pan with nonstick cooking spray, setting it aside as well.

    In a small bowl, combine ½ cup cake mix, brown sugar and butter. Your best bet is to use a pastry blender to blend butter into the mix until it's fine crumbs.

    Stir in your chopped pecans and set it aside.

    In a separate bowl, add together your remaining cake mix and the flour and mix it well.

    Add in your eggs and sour cream and mix it very well.

    Gently fold in your berries.

    Spread this mixture into a prepared pan and top it with the crumb mixture you have made.

    Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

    • 2 eggs
    • 1 cup sour cream
    • 1 12 oz package frozen mixed berries thawed
    • 1 15.25 oz box yellow cake mix

    Instructions
