- ½ cup (1 stick) butter, softened
- ⅔ cups white sugar
- 2 eggs
- 1 teaspoon vanilla
- 1-½ cups all purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup white milk
- 2 cups fresh apples, peeled, cored and diced
- 1 teaspoon ground cinnamon
- 1 teaspoon white sugar
Topping:
- ⅓ cup brown sugar
- 1 teaspoon ground cinnamon

Directions for making this Simply Delicious Apple Bread Recipe:
Preheat oven to 350 and spray a loaf pan with nonstick cooking spray and set aside.
Add butter and ⅔ cup white sugar to a mixing bowl and beat well until light and fluffy. Beat in eggs and vanilla.
Add flour, baking powder and salt and beat until combined.
Beat in milk until batter is smooth.
Pour half of the batter into the loaf pan.
Mix together the apples, 1 teaspoon ground cinnamon and white sugar and sprinkle half of the apples onto the batter in the pan.
Repeat layers, finishing with apples on top.
Mix together brown sugar and cinnamon and sprinkle on top.
Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before removing from pan and slicing.

This recipe is delicious. I made it twice recently and it was pretty easy to make. The first time I made it, I didn’t have access to an egg beater or mixer, so I mixed the batter by hand. The cake came out very light and fluffy. The second time I made it, I used an egg beater to mix the ingredients and the cake was much denser. I preferred the first method with the resultant lighter texture of the cake. I may have beat the batter too long, however. All in all, a very delicious cake which I would highly recommend making.
