- ¼ cup coconut oil, melted
- 4 large bananas
- 1 cup brown sugar, firmly packed
- ¼ granulated sugar
- 1 teaspoon pure vanilla extract
- 2 eggs
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ⅛ teaspoon salt

Preheat and Prepare
Firstly, preheat your oven to 375 degrees F. Grease and lightly flour a loaf pan, or use a non-stick cooking spray with flour. This step ensures that your coconut oil banana bread doesn’t stick to the pan and it comes out perfectly every time!
Mix the Wet Ingredients
In a large bowl, combine the sugars, vanilla, eggs, bananas, and melted coconut oil. Whisk until the mixture it is creamy and smooth. This is where the magic begins! The ripe bananas and coconut oil blend to create a deliciously fragrant mixture.
Add the Dry Ingredients
Next, add in your all purpose flour, baking soda, baking powder, and salt. Whisk for about a minute until you have a creamy batter.
Be careful not to over-mix; a few lumps are totally fine! In fact, lumps of banana in this bread make it even better!
Pour and Bake
Pour the batter into the prepared loaf pan. Do not fill all the way to the top because the bread will rise slightly.
Pop it into the oven and bake for 45-55 minutes. Your kitchen will start to fill with the heavenly aroma of baking banana bread...YUM!
Check for Doneness
To check if it’s done, insert a toothpick into the center of the bread. If it comes out clean, your banana bread is ready! If not, give it a few more minutes. I recommend giving it a check at the 45 minute mark, as all of our ovens are a little different, aren't they?

If you are baking this banana bread in glass loaf pans, bake them at 375 degrees F for 45-55 minutes. You will want to reduce your baking temp by 25 degrees if you are using a dark pan.

Ingredients
- ¼ cup coconut oil you can also use melted butter
- 4 bananas very ripe bananas
- 1 cup light brown sugar firmly packed
- ¼ granulated sugar
- 1 teaspoon pure vanilla extract
- 2 eggs
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ⅛ teaspoon salt
Instructions
- Preheat oven to 375 degrees F and grease and lightly flour a loaf pan or use a non-stick cooking spray with flour like Baker's Joy.
- In a large bowl, combine the sugars, vanilla, eggs, bananas and coconut oil and whisk until creamy and smooth.
- Add flour and baking powder and whisk until you have a creamy batter.
- Pour into prepared loaf pan. Do not fill all the way to the top because the bread will raise slightly.
- Bake at 375 degrees F for 45-55 minutes. Insert a tooth pick into the center of the bread (I use bamboo skewers too) and if it comes out clean, your bread is done.
