This Slow Cooker Beef and Sweet Potato Stew Recipe is tasty and easy to make, it's why I love slow cookers so much!
I love the flavor and I don't even really like squash or sweet potatoes...but somehow, this recipe just blends the flavor profiles perfectly and it's utterly delicious.

Slow Cooker Beef and Sweet Potato Stew Recipe
This has got to be one of the easiest recipes I have made in awhile! The stew beef is already pre-cut at your local supermarket, so no need to even cut the beef, The onion, sweet potato and butternut squash prep time was only about ten minutes tops.
After that all you have to do is throw all the ingredients in together and turn the slow cooker on! This recipe serves 6 to 8 hearty portions. It has the health benefits of the sweet potato and the butternut squash.
You can also stir in some peas if you want to add a little color and nutrients from green veggies.
I would stir in 1 cup of frozen peas the last 30 minutes or so of cooking. The flavor of the beef and beef broth go hand in hand with all the other ingredients.
I have always been a fan of rosemary, especially when cooking pork, but this recipe has allowed me to add it to beef which I normally don't do.
The rosemary adds so much flavor to this Hearty Sweet Potato and Beef stew Recipe, it is truly a unique flavor combination.
The garlic salt and thyme also went really well with the other spices, and together this stew was rich in flavor as well as super colorful!

When people think of stew they normally think of using white potatoes. I love how this recipe calls for sweet potatoes, so much healthier and more colorful than the typical white potatoes we are all used to having.
I like to make stews in the winter time or when I am fighting those horrible colds that like to creep up on me from time to time, but I also like making stew for the week. This recipe would get me through the next 7 days.
What I like to do is alternate. For instance stew for lunch on Monday, then stew for Dinner on Tuesday and so on.
When I feel like I am getting a bit tired of eating the same thing during the week, I simply freeze the leftovers and have it for the following week.
I just make sure to freeze it in an air tight container to prevent it from going bad.
Also, as I have done before, I offer my daughter a bowl when she stops by or even give a couple portions to my neighbor. In addition to it being so easy to make, it was relatively cheap to make as well!
I also bought some fresh bread to go along with this stew, but you can serve it with a small salad on the side to make a big meal out of it, or along with table crackers.
