If you like baked potatoes, you are sure to LOVE this easy cheesy garlic bacon potato recipe! Although I am a huge fan of garlic, these aren't overly garlicky. They have just a hint and if you really like garlic, I'd add an additional teaspoon of garlic powder or maybe a teaspoon of minced garlic.
I was a bit leery on the small amount of the water the recipe called for, but it was perfect.
I decided to cook this recipe as a side dish for an indoor date night to go along with some nice NY strip steaks as my partner is a total steak guy (as most men are). He usually orders a loaded baked potato while we dine out, so I thought this recipe would be absolutely perfect! It has the cheese, the bacon, the onion and of coarse the potato!

- ¼ cup chopped onion

Crock Pot Cheesy Potatoes with Bacon Recipe Directions:
Spray slow cooker with nonstick cooking spray. Layer half of potatoes, onion, garlic salt, bacon and cheese into slow cooker.
Repeat with a second layer.
Drizzle 1 tablespoon of water on top of the potatoes.
Cover and cook on low for 6 hours or high for 3-3-½ hours. Stir before serving.

Crock Pot Cheesy Potatoes with Bacon
Ingredients
- 5 large russet potatoes peeled and cut into 1" cubes

I have a question about the bacon. You say to cook it beforehand, but in the crockpot pictures where you are layering the ingredients, that bacon looks raw. Is it okay to start with uncooked bacon, as it will definitely cook in the crock pot?

Yes, you can use raw bacon! I have made the recipe post ways, it works well even with raw bacon.
