How to Make Mocha Cookies
Our secret ingredient to these fabulously chocolatey cookies is instant coffee!
Ingredients you will need to make our Cookies
- 1 tablespoon instant coffee dissolved in 2 tablespoons hot water
- 1 cup flour
- 2 tablespoons unsweetened cocoa powder
- ½ teaspoon baking powder
1 cup butter (2 sticks), softened
- ½ cup sugar
- 2 eggs
- 4 teaspoons oil
- 1 teaspoon vanilla
- ½ cup mini chocolate chips

Preheat your oven to 350 degrees Fahrenheit and grease a 12 cup muffin tin with non stick cooking spray.
In a small bowl, mix flour, cocoa powder, and baking powder. Set aside.
Beat butter and sugar together in a mixing bowl for 2 minutes. Add eggs, oil, coffee and vanilla and beat well.
Add in your all purpose flour and beat it until just combined.
Use a 2 tablespoon portion scoop to scoop batter into your prepared muffin pan.
Sprinkle the tops with your mini chocolate chips.
Bake for 8-12 minutes or until a toothpick inserted in the center comes out clean.
Remove these Mocha Cookies from the hot oven and let them set for 2 minutes before removing them from the hot pan.
Let them finish cooling on a wire cooling rack.
This Mocha Cookies recipe makes 20-24 cookies.
