    I personally am not a big huge fan of quinoa, but as everyone else on the planet seems to be, I thought it would be fun to share a few recipes with you guys that incorporate quinoa as the main ingredient, like the Quinoa Pizza Bites Recipe I shared a while back. 

    I don’t know if Meatless Monday is still a trendy theme, but it never hurts to throw healthier, meatless options into your weekly diet.

    Not only do you save money on groceries by eliminating meat every once in a while, but there are so many health benefits to increasing the vegetables and healthy grains in your diet!

    How to Make this Vegetarian Pesto Quinoa Bake Recipe

    Pesto Quinoa Bake Ingredients

    • 2 C. cooked Quinoa (1 C. quinoa cooked in 1 ¾ cups of water or chicken broth)
    • 2 eggs, whisked 
    • 2 C. fresh baby spinach tightly packed and chopped
    • ½ C. pesto 
    • 1 C. fresh parmesan cheese, grated
    • ½ C. shredded mozzarella cheese + extra for sprinkling on top.

    Directions for making our Pesto Quinoa Bake

    Firstly, preheat the oven to 350 degrees F and spray a small baking dish non-stick cooking spray.

    Combine all the ingredients and pour into the baking dish and add an extra handful of shredded mozzarella on top.
