    This Easy Blueberry Coffee Cake Recipe is just utterly and incredibly delicious! It isn't overly sweet, so it is the perfect recipe for any breakfast and brunch - especially if you are having your girlfriends or someone special over for a birthday brunch!

    Of course, you don't have to only eat a coffee cake with breakfast...this recipe is also great to serve as a snack, or a light dessert after lunch or dinner!

    The top of this blueberry coffee cake is nice and crunchy - isn't the crispy part always the best part when it comes to coffee cakes? Yum!

    I may make this blueberry coffee cake recipe for Mother's Day this year, as my mom, sisters and I used to get together for a Mother's Day brunch every year, and we haven't done it in a while.

    I think it's time to bring back that fun filled tradition!

    We would send all of the kids off with their dads, or to grandpa's, and have tea cakes, quiches, etc, and my mom would decorate her house with the cutest Mother's Day and Spring-themed decor!

    Easy Blueberry Coffee Cake Recipe Ingredients

    • 2-⅓ cups all purpose flour, divided
    • 2 teaspoons baking powder
    • ½ teaspoon salt
    • ½ cup (1 stick) butter, softened and divided
    • 1-¼ cup sugar, divided
    • 1 egg
    • 1 teaspoon pure vanilla extract
    • ½ cup milk
    • 1 pint fresh blueberries
    • ½ teaspoon ground cinnamon

    Easy Blueberry Coffee Cake Recipe Directions

    Preheat your oven to 350 and spray a square baking pan with nonstick cooking spray and set it aside. Even if you think that it is a nonstick baking pan...don't trust it!

    I have had far too many recipes ruined because my so-called "non-stick" baking dish wasn't really all that non-stick!

    In a small bowl, add 2 cups flour, baking powder and salt. Mix well and set aside.

    Easy Blueberry Coffee Cake Recipe

    In a medium mixing bowl, add ½ stick (¼ cup) butter and ¾ cup white granulated sugar. Beat this on medium speed for approximately three minutes.

    Add in the single egg as well as the vanilla and beat it well. It should be a flight, fluffy and creamy consistency once it is completely blended.

    Next you are going to add in the flour mixture and the milk and beat just until combined. Fold in the blueberries, being very careful not to smash them up.

    The coffee cake looks much nicer if the blueberries are in whole pieces and the juices don't mix too much into the batter.

    If you are using a package of frozen blueberries or canned blueberries, be sure to completely thaw them, drain them and pat them dry before adding them into the dough mixture.

    Otherwise the additional moisture from the blueberries will completely change the density of the coffee cake.

    Pour the batter into a prepared pan and spread it out evenly.

    In a small mixing bowl, add in the remaining half stick, or ¼ cup, of butter, ⅓ cup of flour, as well as ½ cup of sugar and cinnamon.

    Using a pastry blender, be sure to blend all of the ingredients together until you have small pea-sized chunks and crumbs.

    Spread mixture on top of batter in pan.

    Bake for 25-30 minutes or until toothpick inserted in the center comes out clean. Let cool completely before cutting into squares.

    Makes 16 squares.

    Ingredients
      

    • 2-⅓ cups flour divided
