If you live in an area that actually has an apple season, I would recommend using whatever apples grow locally to you. However, you can use any apples for your apple-onion mixture.
I personally think that the best apples are sweet apples like Red Delicious, but any green apples will do, like granny smith apples.
I like a bit of tart flavor from my apples, but this recipe works regardless of which variety of apples you use. The most important part of achieving the great flavor in this Crock Pot Pork Tenderloin is the apple cider and apple cider vinegar and herbs.
We recommend that you splash a little lemon juice on the sliced apples while you are getting everything ready. This will ensure that they do not turn brown and ugly looking.
- sliced onions - Sweet onions or white onions
- apples, cored and quartered - or you can use apple slices if you like
- boneless pork loin roast
- sea salt / kosher salt and black pepper
- carrots
- New potatoes or red potatoes
- Garlic
- Herbs such as thyme and parsley
- Apple cider
- Apple cider vinegar
- Fresh ginger, peeled and minced
- Ground ginger
- Brown sugar

Instructions for How to make this Crock Pot Pork Tenderloin with Apples
Go ahead and give the bottom of your crock pot a light spray of nonstick cooking spray. Combine your herbs in a small bowl.
Place the onions and layer of apples on the bottom of the slow cooker.
Cut deep slits into pork roast and rub in the salt and pepper and place it in the slow cooker on top of the apple-onion mixture.
Add the carrots around the pork tenderloin roast.
Sprinkle the pork roast with the garlic and the herbs.
Don't forget the potatoes!
Combine the cider, vinegar, ginger and brown sugar and pour alongside the roast.
Cover and cook on low for 6-8 hours or high for 3-4 hours.
Remove to a serving platter and arrange the vegetables around the roast.
Hint: I find that it is best to wait to slice the pork tenderloin until you are ready to serve it, as it tends to dry out easily.

Do you have any leftovers? One of my favorite things to do with leftover pork roast is to place it on a cutting board and slice it thin. Then you can top it with a drizzle of balsamic vinegar, serve it up with a side of brussels sprouts, or make a sandwich!

- 2 medium onions halved and sliced
- 4 apples cored and quartered (peeled, optional)
- 1 pork loin roast 3 ½ - 4 pounds
- Kosher salt and pepper
- 4-6 carrots peeled and cut in 1 inch pieces, or 20 baby carrots
- 1 cup new potatoes or red potatoes quartered (1 inch pieces)
- 2 cloves garlic minced
- 2 tablespoons chopped herbs such as thyme and parsley
- 2 cups apple cider
- 2 tablespoons apple cider vinegar
- 1 tablespoon fresh ginger peeled and minced
- 1 teaspoon ground ginger
- 1 tablespoon brown sugar
Instructions
- Place onions and apples on the bottom of the slow cooker.
- Rub pork roast with salt and pepper and place in the slow cooker.
