    This is a recipe you can spend 2 days making, which sometimes makes things easier. 

    This is a shortbread like cookie, so a little crunchy and then the cranberries are sweet and chewy in the center.

    How to Make This Cranberry Pinwheel Cookies Recipe for Christmas

    Cranberry Pinwheel Cookies Recipe for Christmas Ingredients: 

    • ½ cup butter, softened
    • ¾ cup white sugar
    • 1 egg
    • 1 teaspoon vanilla 
    • 1-½ cups flour
    • ¼ teaspoon baking powder
    • ¼ teaspoon salt
    • 3 tablespoons brown sugar
    • 1 tablespoon milk
    • ½ cup chopped fresh cranberries
    • ½ cup chopped peanuts (I used ice cream nut topping)

    Cranberry Pinwheel Cookies Recipe for Christmas Directions: 

    Cream butter, sugar, egg and vanilla with a mixer until fluffy. Add dry ingredients and beat just until combined. Wrap dough in a ball and cover with plastic wrap. Refrigerate for one hour.

    Roll chilled dough onto a floured surface into a large rectangle.

    Mix together brown sugar and milk and spread onto the dough, leaving a ½" edge all the way around. Sprinkle with cranberries and peanuts.

    Roll up dough, starting with the long edge and wrap tightly with wax paper. Refrigerate overnight.
