My food writer had the intent to make Valentine's Day whoopie pies and this recipe was a new one that she thought to try. Unfortunately, it quite literally fell flat, but the end result actually made for an amazing sandwich cookie.

Whoopie Pies Cookies Recipe for Valentine's Day
The best way I can describe this is an oatmeal cream pie. It has a soft and chewy cookie outside with a frosting center that's really good!
They are pretty sweet, but of course I had no problem eating some!

These will stick together if you stack them, so be sure to use a parchment paper or wax paper if you plan to stack them to store. The few moments they were together for a photo was fine. They will also stick to a plate.
As for the "heart shape" I tried to make perfect hearts. I traced a cookie cutter on parchment paper and then added the batter within the traced heart and it basically made just a round circle. So, this shape worked better, it's awkward looking but cooked up in to a nice heart. If all else fails make rounds, and call it good!

Ingredients for making this Whoopie Pies Cookies Recipe for Valentine's Day
- 1 box, 15.25 oz, red velvet cake mix
- 3 eggs
- ½ cup oil
- 1 teaspoon vanilla
- 1 tub, 16 oz, cream cheese frosting
- valentine sprinkles

Directions for making this Whoopie Pies Cookies Recipe for Valentine's Day
Preheat oven to 350 and line a baking sheet with parchment paper. Set aside.
Place cake mix, eggs and oil in a mixing bowl and beat.
The batter will be stiff.
Spoon batter into a pastry bag or gallon resealable freezer bag (make sure it's a freezer bag). Twist the open end and snip so you have ½" tip.
Pipe a heart shape onto the prepared parchment paper and bake for 8 minutes.
Remove from oven, let cool on a baking sheet for 2 minutes before removing to a cooling rack to cool completely.
Once cookies are baked, match them up in pairs. Frost the bottom of one cookie and place another on top.
Cookies are soft so it's easiest to frost them on a flat surface. Sprinkle valentine sprinkles around the edges and set aside.

For the last few years, I have been celebrating Valentine's Day as a divorced woman...which is to say, things are very, very different than they were when I was married!
